I was saying last week how our Monday night salads literally used to rotate between taco, tuna & plain chicken. But they have gotten soooooo much better lately...basically because they've pretty much become "whatever we have in the fridge" salads;) It's kept them pretty interesting! And look at this beauty from tonight:
This pretty little number contained:
- Red lettuce
- A handful of shredded basil
- Shredded rotisserie chicken
- Strawberries
- Raspberries
- A sprinkle of almonds
- Shredded Carrots
- Onions
- My little mix of Sugar Free Apricot preserves, dijon mustard, red wine vinegar & olive oil as dressing
And tonight's star ingredient:
Well, it was actually neither of these since the goat cheese came in a "three pack" (from Trader Joe's, of course;) and I used the Pepper coated cheese for tonight's salad topper (although I already have plans for these other two babies!:) But this salad was sweet & savory, crunchy & creamy which = pretty awesome to me!!!
And it ain't a bad looker, I might add! ;)
