Not Too Pretty but....

...pretty tasty.  That's my saying a lot, huh??  I don't know if that's a good or bad thing:)
So since Tuesday dropped back down into FALL-like temperatures, I thought SOUP would be the perfect dinner.  (why do you tease me so, Weather???  Today is EXACTLY how I dream ALL of October would be! ...well, maybe with some sunshine, as it's UBER gloomy here today!)  So last night we went with a (none too pretty, but super flavorful) Indian Spiced Chickpea and Fire Roasted Tomato Soup...

I ran to TJ's at lunch to pick up some Fire Roasted Tomatoes (cause they are so much better then the plain diced ones;)...and AGAIN did not look carefully enough at the label. (Bake At Home Bread, much??)  And failed to noticed that there were also CHILES in the tomatoes... (HELLO!  It's RIGHT THERE!)

The soup had A TAD more heat that I usually like (although, spicy fans would really like this!) but it was nice & warming to the soul:).  And I really dug the sour cream to 'cool it down';)  I was afraid we were going to be hungry after this one, but those TWO cans of chickpeas did NOT fail in the FILLING department:)  (ps-I mashed one can with the onions, but left the other whole)

I had planned all day to make open-faced 'grilled cheese' slices to go along with the soup, but we were (GASP) our of BREAD!  So we just each had a little of these leftover chips.  These babies are SOOOOOOOOOO good...and really only 20 calories and 2 grams of fat MORE than the Reduced Fat brand.  (Not that I don't like the RF, but they taste more baked, while these taste more 'crisp...shall we say;)
So anyway, this was a good dinner in keeping with (for the most part) using recipes where we have all of the ingredients on hand already...minus those CHILE filled tomatoes:(  We have another "pantry" meal planned for tonight, but it should be another FLAVORFUL one.  Have a good day!
