Calm Before the Storm...

Aren't these guys cute??  It was apparently "Alpaca Day" at the Collingswood Farmer's Market...which was A-OK with me since they are just adorable!  (Plus, how awesome is the word "Alpaca"?  I mean, really!;)

So after our alpaca gazing...we got to business with our usual produce pick up, and managed to snag a few specialty items along the way.  I got some homemade Pumpkin Butter for my Momma (who loveessss pumpkin!) and some Jersey Made Butter Bean Blossom Honey for me!  We Love Local! :)  (Well, Ohio's pretty cool too;)

And even though I said I wasn't going to do it this week (cause we already had some in the fridge), I just COULD NOTTTTTT walk past the strawberries today and not get any!!!  Their smell was intoxicating!  And they tasted just as good...these were like CANDY!  They were soooooooooooooo sweet!  TO. DIE. FOR!!!!!

And along with my sugar berries and Carnation Instant Lunch Breakfast...I had some of these little gems of gold for lunch.  Although it is DANGEROUS to have this bag anywhere in your vicinity.  Your best bet is to lock them in a safe and forget the combination;)  They are just SOO GOOD!

Anyway, I knew it wouldn't be too long before we put that Roasted Garlic Salsa to use...and it didn't...

We used it tonight to make Salsa Burgers with caramelized onions & provolone on a lettuce wrap....soooooooooo yummy!

Ever try lettuce wraps for burgers???  You know I love me some good bread (well, preferably if it's cooked!:)  But lettuce wraps make an awesome swap sometimes!  It saves you about 100+ calories, PLUS you can REALLY taste the burger.  It's a win-win!

For our side, we did sweet potato and scallion grill packets...

You could make these 1,000 ways (I already have an idea for next time we have sweet potatoes;), but tonight we cut up 2 sweet potatoes, a few scallions and sprinkled them with salt, thyme, garlic powder and a little olive oil.  You seal up the foil and throw them on the grill for half an hour.  Perfect-o!

And of course, we also had some leftover "Costa Rican" Melon salad...no fail!

And here's where we went wild & crazy.  Are you ready??  We had our burgers with some...LEMONADE! :) hahahahahahaha....and gasp, it wasn't diet!  PAR-TAY! :) 
So I have been cooking on and off ALL DAY to get ready for my Mother's Day brunch tomorrow morning!  I hope it turns out well, as I have a few new recipes I'm trying out!!  Stay tuned!  (And for all you Mom's out there:  HAVE A BEAUTIFUL DAY!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
