So we went for a simple, but classic Tex-Mex star for last night's dinner: Chicken Fajitas!! They are always so easy and good (and fairly healthy, minus the sour cream & cheese;), that we both wondered last night why we don't make them more often...like, once a week:) hahahahahhaha
We started by chopping up the vegetables...ahhhhh, signs of summer! My cutting board looked SO BEAUTIFUL!
Next, Scott coated the chicken in (the not so Mexican:) Belize BBQ mixture and cooked them on the grill. Then he samaria-ed them into strips! Just check it out, the knife and fork were FLYIN!!:) ...
I cooked the peppers & an onion in a little garlic and olive oil until they were soft...and tossed in the chicken for a quick mix once it was off the grill...
I got our fajita toppins lined up on the porch....which, I might add, was one of the most GORGEOUS nights to eat outside! Thanks weather! Can we keep that humidity away permanently???? :)
And finally, we got to layerin these bad bears! First with Tortilla Press BEST EVER guacamole, then the peppers, onions, chicken, some sour cream and a little sprinkle of cheese. All wrapped in my lovely 80 cal. LaTortilla Factory tortillas..DELISH!!!
And as our side, our frequent summer side dish: Grilled Zucchini "ribbons." I just peel the zucchini with a wire cheese slicer, coat them in a little olive oil and some sea salt and grill till crispy. These are healthy, quick & delicious...and puts to use that GLORIOUS fresh spring/summer produce!
After dinner, we had another *NOT QUITE MEXICAN, BUT SORTA/KINDA CLOSE* treat:) We had a couple squares from the chocolate bar we had got in Grenada. It was bitter, then sweet, then back to bitter:) Quite an interesting chocolate experience:)
Well, I'm on my own for dinner tonight since Scott has to stay late at work for a meeting. I've already had about 40 ideas about what I could make for dinner:) hahahahhahahaa....we'll see which one I actually narrow it down too:)
