Sooooo....anytime Scott has to work late and I eat dinner by myself, that usually equals one thing = Seafood. Scott is NOT a fan (aside from shrimp), so I try to get all my tilapia & salmon cravings out on those days:) And I had allllllll good intentions ALL week of making THIS, since it was both FISH + Moderately Mexican...
That was all fine and good, until I found THIS in my pantry on Wednesday night...
And here's an interesting little story to go along with this can:) My love for cooking COMPLETELY skipped a generation...I got it ALL from my Grandmother. My Mom used to have NO LOVE for the cooking (she's come a lonnnnnngggggggg way over the years, though!!!!!!) But anyway, back in the day my Grandmother used to go on bus trips to Atlantic City on Sundays, usually about once every couple months. (complete with her "change purse"...God, I miss her! :) But EVERY SINGLE TIME she went to Atlantic City...me & my Mom would ALWAYSSSSSSSS have spaghetti with clam sauce for dinner! It was almost like our "cheat"...an Italian kid's version of Chinese Take-Out:) hahahahahhahahaha....
And even though Scott was at work, NOT Atlantic City:)...Grandma, this one's for you;)

So anyway, I thought I'd show you what ELSE I ate yesterday, since dinner out of a can (nostalgic or not:), isn't exactly thrilling:) For breakfast, I had two slices of the Extreme French Toast bread...and one slice I slathered with this Dark Chocolate Peanut Butter....(and yes, I also brought that apple with me:)
Truth be told, I actually enjoyed the plain slice more! There was just something about the sweet bread that was so yum just plain & simple!! :)
And here was my lunch:
Which contained:
- Grilled Chicken
- Spinach & Lettuce
- Snow Peas
- Shredded Cabbage
- Cubed Monterey Jack Cheese
- Diced dried Apricots
The Apricot & Cheese combo was AWESOME!!
And I mixed in a little of this dressing. I don't mess around too much with "light" salad dressings if they don't taste good. I'd rather eat a salad plain, but this one was really good...
So...back to dinner:) After my nostalgic spaghetti & clams, I went for a really great 45 minute walk/jog in the park near my house. I have a few blisters, but it felt fantastic! :) And after I got home, I immediately started in prepping dinner for TONIGHT...WHICH is when I will FINALLY let my TRUE CINCO DE MAYO star dinner shine!!! I'll give you a few hints: Our main course involves THIS...
And dessert is involving THAT....
Any guesses??? It should be a good one!!!! Happy FIESTA FRIDAY! :)
