Farmer's Market Meals...

So Saturday morning was spent the way almost every one has been spent since May 1st: At the Collingswood Farmer's Market!  Yeah!!  Even if it was SO PACKED and I just had to 'walk away from the cheese' because it was just TOO CROWDED.  Fortunately, Scott went back and grabbed a brick because we had one of THE tastiest lunches on Saturday afternoon:  Farmer's Market Grilled Cheese....

"Hillacres Farms" has THE BEST fresh mozzarella this side of "Cheese Class"...but we thought we'd switch it up a bit and tried out this....

Next up, we got the foccacia bread from our favorite "Great Harvest" stand.  (Home of the awesome "French Toast Bread")  OMG...this is THE BEST foccacia bread ever!!!  It is DELICIOUS!!!  They even give you two loaves, which is completely dangerous! ;)   

So, I'm a weirdo (admittedly) and I'm not AT ALL a fan of 'raw' tomatoes, but I LOVE them cooked.  So I seeded and chopped up the tomato and cooked it in a dry skillet for about 10 minutes until all of the liquid was absorbed and the tomato was soft.  I slathered that on the bread along with the cheese, fresh basil & a drizzle of olive oil....

Next, we smoooooooshed it in our counter top "grill"...

And had it with a side of sweeeet fresh strawberries.  This was just about the MOST delicious lunch!  The bread was chewy and flavorful, the cheese was SO smoky & gooey and the strawberries...oh the strawberries...are just HEAVEN!  This season has brought the TASTIEST strawberries I ever did have!

And we kept our "fresh items" theme going for dinner too!  As Scott said: We had a PACKED grill that night!

We made more sweet potato grill packets.  THIS TIME I had them with little pats of butter, sugar-free maple syrup and some cinnamon.  Oh my, I opened the packet and it just smelled like THANKSGIVING!  Yum!  I have a feeling it is going to be a popular side dish, particularly in the FALL :)

And we also had some thinnnnnnnnn grilled asparagus.  These were good, except I totally forgot the part about having to 'snap' the asparagus and had some MAJOR tough ends!  Oppppssss..... ;)

And finally, Scott made some spicy burgers with steak seasoning, garlic & a little chipotle powder, topped off with MORE of that delicious smoked cheese!  Yum!
So aside from the bowl of oatmeal I had for breakfast and the meat for the burgers, EVERYTHING else we had on Saturday came directly from the market...so I was SUPER happy we were eating everything FRESH and it was allllllll delicious!!

Ok, I'm lying...we did have one other thing that was not from the market, but it was from Trader Joe's...and that's 'sorta close' ;)  I made a vanilla pudding pie with this TJ's pudding.  This is one of our favorite cool, summer desserts!  Although I'm glad I took this picture BEFORE I sliced the pie, since it completely fell apart once I cut into it...but who cares, it was like a pudding parfait "and ain't nobody don't like parfaits!"  (Shrek, anyone??)

And a side note, I need to publicly brag a bit:  Scott lost another 6 pounds bringing his grande total so far to 66 pounds lost!  He needs new clothes now ;) hahahahahhaha...CONGRATS love, I'm tryin to catch up to YOU now! ;)

congrats to scott! i keep reading your blog for ideas, i've cut out most carbs so i'm always looking for new meals..i'm down 52 pounds so far and i feel like i'm still eating anything i want

YOUR SO AWESOME KRISTEN!!!! WOW! 52 pounds is NO SMALL FEAT! And I think it's great you still feel like your eating anything...it is the ONLY way to do it! Severe restrictions get you NO WHERE! Keep up the awesome job!!!
