And FINALLY: Spaghetti Squash Casserole...

Woooshhh...after 5 days of being unable to upload ANY pictures to my computer: I AM FINALLY BACK ON TRACK!!!  Computer problems can be so darn frustrating:P
Annnyyyywayyyy...so now I have quite a few things to update you with, so I guess I'll spread em out over the next few days so I don't overwhelm you with Farmer's Markets & Couscous;) 

And since I'm SURE you've spent sleepless nights since MONDAY trying to figure out WHAT I made with the spaghetti squash...well, here ya go...our favorite and soon to be yours: Spaghetti Squash Casserole...
I stole this recipe from my Mom and keep it on an index card in my "recipe box" :)  So here's the recipe for you!

SPAGHETTI SQUASH CASSEROLE
  • 1 Spaghetti Squash, halved lengthwise and seeds removed
  • 1 tablespoon vegetable oil
  • 1 small onion, chopped 
  • 2 cloves garlic, chopped 
  • 1 teaspoon basil 
  • 2 plum tomatoes  (or 6...that I ended up using;)
  • 1 cup low-fat ricotta cheese 
  • 1/2 cup shredded low-fat mozzarella cheese 
  • 1/4 cup chopped parsley 
  • 1/4 teaspoon salt 
  • 1/4 cup grated parmesan cheese 
  • 3 tablespoons seasoned dry bread crumbs
(I loved all the colors!)
  1. Preheat the oven to 400°F. Coat a 13" x 9" baking dish and a baking sheet with nonstick spray. Place the squash, cut side down, on the sheet. Bake for 30 minutes, or until tender when pierced with a sharp knife. With a fork, scrape the squash strands into a large bowl. 
  2. Meanwhile, warm the oil in a medium skillet set over medium heat. Add the onion, garlic, and basil. Cook for 4 to 5 minutes, or until the onion is soft. Add the tomatoes. Cook for 3 to 4 minutes, or until the mixture is dry.
  3. To the bowl with the squash, add the ricotta cheese, mozzarella, parsley, salt, and the onion mixture. Stir to mix. Pour into the prepared baking dish. Sprinkle with the Parmesan and bread crumbs.
  4. Bake for 40 minutes until bubbly and heated through.

This dish is pretty versatile.  You can make it with canned tomatoes, dried herbs, etc.  I actually didn't have any shredded mozzarella on hand, so I added slices of lite provolone instead.  And I happened to have fresh spinach on hand that was about to turn to the "dark side", so I threw that in there too!  So good!  But this is delicious and a pretty fancy way to impress your friends with the often-overlooked spaghetti squash!
