Soooo...it's Tuesday, and you know what that means....we had salad for dinner last night:) I didn't take any pictures because it was the same salad I had a few weeks ago with chicken, strawberries, almonds & apricot dressing. It's too good, hence why I had to have it again so soon;) hahahhahaha...
So I figured since I had nothing else super new to show you, I'd show you some pictures of a few items I made for Mother's Day brunch LAST year since they actually are great summer/entertaining type recipes that you'll really enjoy! (Now, mind you: this was 'pre-blog', so please excuse my FLASH photos...as I hadn't gotten tips from my friend over at "Fifty Two Thousand Words" yet;)
Appetizer one: Coconut Frushi....seriously, how cute is this??? I guarantee that if you bust these out at a party, you will get plenty of 'ohhhhs and ahhhhs' ;) I remember having a bit of trouble getting the rice to form (and went through everything from flour to corn syrup to get them to stick!), but that MIGHT just stress how important it is to use SUSHI RICE! :) (and another ps-I NOW know they sell it in the bulk bins at "Whole Foods":)
But these little babies were really tasty (even with the flour/corn syrup debacle!) and the fresh raspberries & blueberries were a nice touch!
Next up: Grilled Strawberry Bread...I loved that this was crispy, sweet & charred all at the same time. I can't wait to try this with BLUEBERRIES (for my blueberry loving husband;)
And just like this year, I somehow failed to get a picture of the 'main course' (which was a spinach & sausage quiche)....but have no fear as I did NOT forget to take a picture of the dessert: A Blueberry & Blackberry Gallete with a Cornmeal Crust...
I lovvvvvvvvvvve "rustic" type dishes, that sorta look like they are thrown together. Because usually: they are! ;) And this one fits that bill perfect;) You just roll out the dough, pour in the FRESH FRUIT filling in the center and then fold over the edges...and you don't have to worry about any part of it being perfect;) I dig that! Plus, this is PERFECT for summer when fresh blueberries & blackberries are a-plenty! And it made for a beautiful presentation (or at least I think so!)
So there ya go, some "Mother's Day/Summer" recipes that you can use for the next few months;) Hope you enjoyed them:) We have a new recipe tonight to go along with this 'back to cool' weather. I LOVE it...THIS is what all of September & October should feel like:) :) :) Have a good Tuesday!
