Well, unfortunately I don't have any pictures of the FEAST we had for dinner last night! My sister-in-law made vegetarian enchiladas & chicken mole. Plus we had taco dip, chips, rice, fruit...PLUSSSS two cakes, ice cream...and a partridge in a pear tree! It was a LOT of food for 11 people, but it was all sooooooooo good!!!!! I ate WAY too much!!! Back to yogurt & strawberries and salad today;) hahahahahhahahaha....
But I do have some odds & ends to show you from the weekend. For lunch on Saturday, I made a variation of this recipe I found in "Health" magazine. I had a leftover can of lite coconut milk in the fridge, so I added that to some strawberries, a frozen banana and a little almond milk to smoooooth it all out since it was SUPER frozen from the fruit. Isn't it oh-so-pretty and spring-y????????
This was sooooooo delicious! I don't think I could REALLY add coconut milk to ALL of my smoothies, unfortunately, as it is fairly caloric....but as a treat (and a way to clean up my fridge!), it was loverly!
For Sunday morning breakfast this week, I used up more of the buttermilk in the fridge and made these Oats & Buttermilk Snack Cakes. I figured it might be one of our LAST 'hot out of the oven' breakfasts for awhile once the summer weather kicks in;)
I made a glaze for the top out of powdered sugar and maple syrup extract. These were so warm & yummy, with the little crunch from the steel cut oats. (side note: I bought a half a cup of oats from the bulk bin at "Whole Foods"....21 CENTS! Sweet, right?? It was JUST what I needed:)
And to fill my "I haven't talked about Trader Joe's in about 3 days" quota: For lunch yesterday, I tried out some of this:
It was very good, but VERY Lime-y! But it did have a nice mellow taste from the avocados and chickpeas. Me likes!
Well, it is most DEFINITLY a salad day after all those fabulous Mexican eats last night! I am ready for that! However-ps...still ACHIN from the yoga! My shoulders and upper arms feel like steel....again, not too shabby, but certainly not pain free! ;) hahahahhahahahaha...I guess this is where that "no pain, no gain" mantra should come in, right??
