A peek at my sanity...

...I kid.  Sort of.

I've talked a lot about ALLOWING and what a difference SMALL INDULGENCES can make to your overall sanity at trying to live a healthy lifestyle.  They can help you make healthy choices throughout your life 80% of the time, without having all that resentment from "I can't have this cause I'm on a diet" (gag) moments.  So here's a peek of what I allow myself to have ALMOST every day:  Chocolate!
I never used to be a chocolate person, so this is still sorta hilarious for me...but I'm making up for lost time, allowing myself little bites almost daily.  Always checking in whether I want it or not.  Yesterday, when I made this video, I actually wanted a couple pieces.  Today?  Not interested at all.  I'm saying that because I'm very tuned into whether I'm having out of habit or because I truly want it.

OK....enough chatter!  Here's the video of my awesome chocolate stash!

Weekly recap, March 20-26th...

Monday:  Kale & Wild Rice Bowl

One of our favorites from Iowa Girl Eats, we've had this one a million and one times since she's shared this recipe.  Bonus:  It made enough leftovers for lunches a couple days last week!


Tuesday:  Slow cooker enchilada casserole + salad
Leave it to social media to inspire not one, but TWO meals this week (see Friday as well😉).  I saw this float through my Facebook feed and knew immediately I had to try it.  3 steps & one slow cooker pot to clean?  Sign me up😉


Wednesday:  Zucchini noodles with meatballs + salad
Gravy & meatballs on Sunday = leftover gravy & zucchini noodles on Wednesday😉


Thursday:  Leftover calzone + salad
It was kinda sad how excited I was to finish off my leftover calzone from last week😉  Not only was it DELICIOUS, BUT any time we finish things off in the fridge and it doesn't go to waste? = 😍  Not wasting food is my happy place😉


Friday:  Cauliflower crust pizza
Yet another one inspired from Facebook (thanks, Lori!).  I was in charge of the crust and I left Scott in charge of the cheese.  Who, as you could imagine, was SUPEREXCITED to be eating cauliflower pizza to begin with (😉, he's a good sport)  So I cracked up when I took the pizza out of the oven and it was nearly end to end covered in cheese😉  Can't blame the man...and he ended up liking it to boot😉


Saturday:  2 quesadillas + rice from Cancun
Getting our taxes done over the bridge in PA led us to dinner at this VERY fun & yummy place.  I already can't wait to take Katie back there because I know she'll LOVE it.  That dueling quesadilla smothered in their fabulous cheese sauce was certainly a decadent option...but holy moly was it just delicious.  Super fun.  (I mean, anything's a step up from that cauliflower pizza, AMIRIGHT?😉)


Sunday:  Cheesy Hash Brown Chili
While the chili + hash brown sounds like a no brainer on the 'yum' scale, we actually were surprised just HOW good this really was.  Great for a cozy, drizzly Sunday night.


Other treats this week:

From a cold, drizzly Sunday, rewinding to Friday night where the weather cracked, um 60...and immediately made me crave ice cream (hold me).  And since I told you I am obsessed with ALLTHEMINTOREOTHINGS, that's exactly what I (& Katie!) got...
...in a mini size😉


Sunday morning:
So remember I told you how I can become FASCINATED with recipes in cookbooks??  So I think a Dutch Pancake was one of the very FIRST recipes I found fascinating in my old Kids Cookbook from the 80's😉  I still remember thinking all the 'HOW'S' with this one😉  And after alllllllll those years?  I finally got around to making one on Sunday morning...ironically, the recipe was again from Chrissy Teigan's cookbook and it was just sublime😍  (made in my Grandmom's old cast-iron skillet to boot!)


Sunday night:
So after the Dutch pancake & Cheesy chili, this is how we rounded off our Sunday (thankfully "lunch" for me on Sunday was just a handful of almonds in between yoga classes😉)  My plan was to make the "Truffle Brownies" on the back of my bag of new coffee flour....only to realize the 'recipe' was a box of brownine mix + 3 tablespoons of flour.  HUH???  That's not very exciting.  
So I ended up using a small box of leftover brownie mix from the cabinet and used about a tablespoon of flour to the mix.  OK, so the brownie WAS very good...but is that really that hard of a task??  I gotta figure out something WAY more creative to do with the ENTIRE rest of that bag of flour before it becomes a cabinet fixture for the next...ummmm...400 years😉
But I DID go back to Trader Joe's and ended up getting that Kona cookie ice cream I mentioned in the video and oooooooooooooooooooohhh was THAT good!  Coffee ice cream is not my 1st pick, but this one was EXCELLENT.  PLUS COOKIE PIECES...weeeeeeeeeeeee!


OTHER recipes this week:
So despite those few treats this week, I managed to focus a LOT on healthy items this week.  I even started taking some extra vitamin supplements (calcium, magnesium, zinc, iron & vitamin C to be exact) and feel REALLY good.  MUCH more mindful this week and MUCH more prepared for a healthy week ahead from doing a bit of prep work on Sunday.  I even kept a running list of items in the fridge (ON the fridge😉) to have for healthier breakfasts & lunches this week:
...so then it was right in my face and knew I could have a healthy, quick meal in moments.  Which REALLLLLLLY helps keep you mindful.


Eaten, um, in the car on the way to teach😉


Broccoli Cheddar Quinoa Bites:
Born out of the facts that:  
A.- I had a bag of riced broccoli from Trader Joe's in the fridge 
B.- Lunch had become SUCH a pitfall for me the past few months that, if I didn't pack a snack to have during all my morning driving arounds, I would come home FAMISHED.  So I NEEDED to recognize that I HAVE to have quick & healthy options ready to go so I can just heat & eat.  
These little babies?  I made a batch on Sunday and they reheat in ONE MINUTE in the microwave.  In that time, I would throw a quick salad together and have lunch in under 90 seconds.  Done & done.


Again, worth mentioning these sugar free/flour free banana oatmeal muffins on the right.  They were perfect grab & go breakfasts or snacks for all of us.  Plus those mini chocolate chips help curb that sweet tooth.


I always forget how much I actually REALLYREALLY like this stuff and all you need to do is google 'Golden milk' to find out ALL of the benefits of this turmeric tea.  I also added a teaspoon of coconut oil & a dash of black pepper.  The coconut oil is for, um, every reason Google will tell you that coconut oil is good😉, and the black pepper helps with the absorption of the effective ingredient in turmeric.  I'm trying to have a cup of this a day...normally in the mid afternoon time frame when I'm CRAVING warmth but want to skip an extra cup of coffee.

Add to all of this, plus making sure to have at least one salad a day, but more often two.  Also paying more attention to meal planning and staggering the meals.  As in: one day we have an EXTRA healthy meal (salad/zucchini noodles), in between 'normal meals' (enchilada casserole/chili.)  And being EXTRA mindful for alllll the other breakfast/lunches/snacks through the weeks will help balance out all those extra decadent meals throughout the week.

At least we try our best😉

And on the exercise front, I had to unfortunately cool it a bit last week after pulling my back a bit at the beginning of the week.  Doing what???  OVERDOING in yoga on Tuesday.

AND WHAT DO I PREACH IN EVERY SINGLE ONE OF MY CLASSES????

NOT OVERDOING

I told some of my classes this week with that old 'parenting' adage: 'do as I say, not as I do.'😉


Exercise:

Tuesday:  Taught gentle & vinyasa yoga + took gentle yoga (where I pulled my back in a SIMPLE FORWARD FOLD...oy!)

Wednesday:  Taught gentle yoga 

Thursday:  Taught 2 Hatha classes & 1 gentle class

Friday:  Taught gentle

Saturday:  Taught Hatha yoga + took Body Jam class

Sunday:  Taught vinyasa & Power yoga 

So not too much balance on the exercise front but hoping to toss in a few more walks this week now that my back is feeling better.  + my teaching schedule is extra hectic this week, so that'll help get me up & movin.


And on yet ANOTHER front, Scott & I have been EXTRA mindful the past few weekends about really being present & enjoying our time together and the result has been feeling VERY happy and refreshed when Sunday night rolled around.  So many times we all just kinda go through the motions of the day and not pay too much attention or being present.  So we've been making extra effort to just BE MINDFUL of time together and it's been refreshing to the soul.  Now THAT is my happiest of happy places, for sure.
  
It's just always worth taking a sec to realize where you feel like you're falling short or not paying enough attention and to just give those areas of your life a little extra focus.

And I write all of that as much of a reminder to MYSELF as well that it's a simple change of focus to bring more presence to your life vs. just going through the motions...yaknowwhatImean??

Food for the stomach...

Hey, all!  How does it happen that I write a post and it's "I'll write more ASAP!," and then I blink and it's 3 months later??😐  It has been EXTRA wild how quick some days/weeks/months fly by.  Sooooo...all that said, and I've been wanting to get back on here for WEEKS and today it seems to finally be the day😉  I've been wanting to revive my "Weekly recap" posts, since I always think it's a good peek at balancing a 'healthy-ish' lifestyle...blending the indulgences with the healthier options and all the exercise to help keep it all together.
And since 97% of the time I forget to take photos (in a flurry of starving & trying to feed 3 other people😉) I figured maybe I'd just start using their source photos (since I've crediting the recipe anyways) which are always WAY prettier than mine😉  It should make for a prettier posting☺

So anyway, without further ado...here's my weekly wrap-up for the week...


Monday:  (Leftover) Biscuits & sausage gravy

More on Chrissy Teigen's cookbook below, but these were definitely leftover from a few days before.  Momma ain't makin biscuits from scratch on a MONDAY. NIGHT.


Tuesday:  Taco Salad

Wednesday:  Jok Moo (Thai Pork & Rice porridge)

So the one thing I ask for every Christmas is AT LEAST one new cookbook that I'm really excited about because (dork alert) one of my favorite things to do on those lazy days lounging by the tree is read (yes, READ) through them and pick out ALLTHETHINGS I'm going to make in the next year (ps- Pioneer Woman's "A Year of Holidays" was one of my all-time FAVORITES to read through!)  So on tap this year was Chrissy Teigen's cookbook "Cravings."  And there's always one recipe in any given book that just CAPTIVATES me, that I JUST. CAN'T. WAIT. to make.  And among all the FABULOUS recipes in her book; THIS RECIPE, for whatever reason, was the one that just spoke to my SOUL😉  So much so that we made it for the 1st time two days after Christmas and a love affair was born.  Creamy, cozy and studded with Thai flavors, I just couldn't wait to make it again!  BONUS:  The leftovers (which are an awesome lunch quick heat-up) are even BETTER!


Thursday:  Chicken Fajitas (in lettuce wraps) + broccoli
The BEST Chicken Fajitas are incredibly simple with no marinating step. Just chop then sizzle. Tastes just like a restaurant's version! | iowagirleats.com
I spent all day trying to figure out what combo of lettuce wraps + chicken sounded good.  It was almost an "OH DUH!" moment when I thought of good ole fajitas.  Plus:  avocado....so who can argue with THAT?


Friday:  Homemade pizza
And by homemade, I mean:  Trader Joe's dough, sauce & mozzella😉


Saturday:  Rainforest Cafe
So since Saturday was my birthday, what else do you do?  But plan all your activities around your kids, of course!  (soooooo never thought I'd be "that person," but ILOVEIT😍)  So we headed north to our closest Rainforest Cafe because I knewwwwww the kids would love it and I was right!  The burger & nachos were good, but the highlight was watching the kids eyes light up at all the moving animals and those indoor thunder stroms😉

Philly Cheesesteak Pasta - Twisted:

This Sinful Coconut Cake recipe is made in a slow cooker so it does not need any kind of babysitting at all. Perfect dessert for a busy celebration. Enjoy!
When I was scannin through the files of 'what I'd want to wrap up birthday weekend,' it had 2 requirements:  1- A LOT OF 'hands off' time & 2- COCONUT (shocking, I know)  As much as INMYHEAD I thought (ON THE PRIOR THURSDAY!) of "Oh, it would be JUSTSOGREAT to spend the Sunday cooking in the kitchen with Katie!," I knew that fantasy would come down crashing QUICK when a busy day couples with a hungry family and then you are just SETTING YOURSELF UP, FOLKS!  (and isn't 'cooking with kids' 98% of the time more fun in your mind vs. reality??😉)  So I picked a menu that involved about a half hour of 'throwing everything together' and then just letting it all cook the rest of the day. 
AND OK, OK...ya want to know how it tastes, of course!  The cake was...interesting.  It was described as a flan/cheesecake texture and it certainly WAS.  Which I forgot to warn Scott about and he thought he was just eating undercooked cake.  So there's that.
But the pasta???   OUT. OF. THE. PARK!  MAKE. IT. NOW!  As good as you'd imagine tender beef, cheese sauce and pasta to be😉



Other treats this week:

Trader Joe's Canneles De Bordeaux
I wish I was as fancy as that above photo suggests...but it's really just to show you these lovely little treats I'm INLOVE with!  The promise of "caramelized on the outside and creamy on the inside" was too intriguing to skip!  They were perfect, vanilla custard-like and 120 calories a pop!  Weeee!


Exercise:

Monday:  Taught Gentle yoga

Tuesday:  Taught vinyasa yoga + 3 mile walk

Wednesday:  Taught gentle yoga + BODY JAM!!!!!!!  (haven't done that in a hot minute and it was soooooooooooooooooooooo fun!)

Thursday:  Taught 2 yoga classes

Friday:  Taught gentle class + 2 mile walk

Saturday:  Taught Hatha yoga + HOURS of MALLWALKING and lugging ALLTHESTUFF😉

Sunday:  Taught vinyasa yoga

Weekly Balance, week 6...

Hey, everyone!  I know I'm a day late & a dollar short on my weekly wrap-up, but I'm trying to get back on track after a couple weeks of 'inspiration roadblock.'  I have plenty of things I WANT to write about, but haven't been able to get my thoughts together enough to write a 'deep thoughts' post and really don't want to half-ass it!  But I should have a couple posts this week to get back in the swing.

And in getting back in the swing....weekly wrap-up post comin at ya NOW!

Monday:  Taco dip with tortilla chips, apples & guacamole
This recipe needs to be the poster child of how I LOVE to cook, but trulyreally at the end of the day CAN NOT.  I mean, honestly!  I swear I just fake it on a wing and a prayer most daysJ  
Example #905048:  This recipe called for rice and we were out of white rice and I just wasn't feelin the brown rice that day (although, honestly, you probably wouldn't have even noticed the chewy texture around everything else going on in the 'dip').  So what do I do???  Add what we had laying around the kitchen,  Which was...wait for it....BLACK RICE.  And guess what BLACK RICE does to a pot of tomato-based red chili??  So yes, that is how we came to eat black/purple taco dip to kick off the week.

At least it tasted good....and even the purple-hued leftovers were really good, but...

MOVING ALONG!


From black rice to rainbow carrots & I SWEAR they are SUPPOSED to be that color!  I'm currently LIVING for those purple/yellow/orange carrot bouquets.  Not to mention this entire dish is 'last meal on earth' contender worthy.  I actually told Scott if we had this same meal for an entire week, I'd be fine with that.  AKA- TRY NOW!



Wednesday:  Chicken puffed tacos 
I tried the Pioneer Woman version this week where you stuffed the chicken in the taco BEFORE taking them for a dip in the hot oil...but then you could barely pry them open enough to top them with all the good stuff...hence that pile of lettuce sitting on TOP of the taco in the frontJ  (oh yes, that IS a taco.  I know...J)  So I nixed that plan for our other 'cos in favor of giving us plenty of room to add ALLTHECHEESEANDGUACAMOLEANDLETTUCE.  I truly love the LETTUCE.
Again, I know....



Thursday:  Pasta with Tomato Cream Sauce 
This meal came about because the day COMPLETELY got away from me (although with what?  At this moment I have ZERO CLUE.  #momlife)  But after flipping through my Pioneer Woman cookbook for those above tacos, I found this recipe and realized we had all the ingredients and that this meal was going to come together in .4 seconds.  I countered that cream in the recipe with replacing 3/4 of the spaghetti with zucchini noodles.  They all played nicely together in the pool of creamy, dreamy sauce.

Friday:  Lunch/dinner at Palace of Asia
2 yoga classes and a terribly rainy & blustery day to end a week of terribly rainy/blustery days led to a craving for Indian food could NOT be ignored for one more moment.  The BEST part of Palace of Asia (besides it being a GORGEOUS restaurant) is their weekday lunch buffet, where you can try ALLTHETHINGS.  And for someone who does not know too much about Indian cuisine, this is a great introduction.  And even after going more times than I can count, I STILL have no clue what my veryfavoritedishes are from there, but I'm always willing to go back as much as possible to try to figure it outJ



Saturday:  Take-out baked ziti + cheesey garlic bread + salad
NEEDED.  At least Scott & I shared the entree with leftovers still lingering in our kitchen.  A great way to portion & 'keep it all in check.'



 Sunday:  Homemade Ravioli + meatballs + salad
I'm not sure anyone enjoyed our Mother's Day feast as much as LilyJ  This coming off the fact that I swear she ate a quarter pound of that ziti on Saturday nightJ


Splurges:

Vanilla Joe-Joe's:
Katie's "If you're good, I'll get you these" bribe impulse purchase of the week.  I had 2 of these a couple nights last week.



Wednesday Lunch:
I wouldn't even call this a 'splurge' as much as I would call it a 'better way to eat not-so-good-for-you' food.  My friend had told me about these and I was SO glad I had picked em up when a RANDOM craving for a hot dog took over.  And rather than another trip to Stewart's, I tossed one of these in the toaster.  And for 150 calories & 4.5 grams of fat, ya really can't do much better on the 'dog front.  



There was also cake on Mother's Day...and in true "I can't cook" fashion (see above), I managed to make the thinnest cake with the gooey-iest frosting the world has ever known.  I can't explain myself.  



Exercise:

Monday:  Vinyasa Hatha yoga

Tuesday:  Taught vinyasa yoga + tap class

Wednesday:  Power yoga + Body Pump  (THAT was all fun & games till it wasn't...hahahaJ)

Thursday:  Taught 2 gentle yoga classes

Friday:  Gentle + power yoga

A peek at balance, week 3...

Hey, guys!  This was one of the most fun weekends in recent memory, so I had to share some quick snaps with you guys before we get to the food today...because I just can't help myselfJ

It all started on Friday with a vision board making party with an awesome group of ladies...
(a reminder to myself to throw some Disney World Mickey ears on that board ASAPJ)

...a birthday party with my girl on Saturday...

...and a night out (OK, we ate at 5:30J) with my oldest girlfriends...

...and my FAVORITETHINGEVER of the day:  Celebrating the Olympic year at Katie's 1st gymnastics show!...

...and even Lily got in on the funJ

And, thanks to my Mom for taking the kids on Sunday afternoon, Scott & I got to take naps.  NAP.  Glorious NAPS.  AT THE SAME TIME.  I can't even pretend to remember the last time that happened.  That may or may not have even trumped Olympic gymnasticsJ

ANYWAY...back to a peek at my attempt at balancing the week on the food front...



Tuesday:  Croque Monsieur + broccoli
Just a fancy word for ham & cheese sandwich covered with bechamel sauce, but I've wanted to make this recipe for approximately 950 years and FINALLY got around to it (much in thanks to the leftover Gruyere from the French Onion grilled cheeses from a couple weeks ago.)  The bechamel was made with thyme and a sprinkle of nutmeg and was just so divine.  It will NOT be another 950 years before we make this again!


The basil-mayo really lifts these from standard lettuce wrap to O.M.GSOGOOD status.  
Plus bacon.


Thursday:  Pea ravioli & brown butter garlic sauce + salad

I was SOEXCITED to make this recipe from Andie Mitchell's Eating in the Middle cookbook that I even made a special stop at the Amish market on Friday for fresh ground sirloin and even texted Scott this picture...
Is my life sad?  
Probably.  It's OK.
Anyway, beef & beans replace the pasta in this recipe for a full-on burst of protein, but still all swirled together with all of that briny, salty goodness.  And just enough of a carb kick with mmmmm...fresh garlic bread.  Swoon.


Saturday:  Family-style dinner at the same Italian restaurant I blogged about on WednesdayJ   (ps-and I paid a fair amount of attention and left just barely full...hallelujah)


Sunday:  Caprese bake + salad


Splurges:

Wednesday:  Bites of Katie's Reese's Bunny...thanks, Easter BunnyJ

Friday:  2 SMALL scoops of this little number I picked up at Trader Joe's

Saturday:  Mmmm....bites of creme brulee & a double chocolate brownie from our Italian dinner.  And ummmm...my favorite part?  The strawberries mixed with vanilla ice cream and balsamic drizzle.  I don't even know who I am anymore.

Sunday:  Mixed bites of THESE...
In honor of Katie's gymnastics show, we had our Moms and niece over for lunch (that Caprese bake)  But, in reality, we were all WAYYYY more excited to crack open the dessert box from Nino's Pastry Shop aka-the best place for cannoli in central Jersey.  The chocolate mousse-raspberry cake wasn't really my jam, but a sliver of that carrot cake and maybe one too many bites of those cannoli cream-stuffed lobster tails were had and SAVORED.  Holy hell, worth every calorie!


Other yummy recipes from the week:


A leftover, lingering bowl of quinoa in my fridge was saved and turned into this dish, which gave Scott & I lunch for 2 days each.  SOOOOOOO fresh & yummy.


Since I was already at the Amish market, I figured I might as well also pick up some ground pork to quickly whip up this quick homemade sausage recipe for fast breakfasts during the week.  I pretty much just had a repeat of that exact dish a few minutes ago because it was SOGOOD (and put together in under 3 minutes!  BONUS)


Sunday breakfast dejour!


Exercise:

Tuesday:  Tap class

Wednesday:  TEACHING Vinyasa yoga class (and, again, shaking like a leaf until I started my classJ) + Body Jam

Thursday:  Teaching a private yoga session...we even tried chair yoga!  That was kinda funJ

Friday:  Gentle yoga

Saturday:  Vinyasa yoga

Sunday:  NAPS.  POWER NAPSJ
