In keeping with our "cleaning out the pantry" theme of the week...we made a simple baked chicken and topped it off with the remainder of this sauce that we had in the fridge. Easy and OH-SO-GOOD! (ps-I got it at Whole Foods)
However....after that, my 'pantry theme' went array:) I obviously had to get these fresh from the store....
And let me tell you...they are one of the BEST vegetables to have ROASTED! We coated them with olive oil, salt, pepper & some garlic powder and roasted them at 400 degrees for about 20-25 minutes. They were crunchy, crispy and sooooooooooo delicious! I could have eaten these like CANDY! (and no, we don't mess around...we did INDEED use 2 packs of Baby Broccoli;)
We were going to have couscous as our other side dish...but yesterday's cold and rainy weather just SCREAMEEEEEEEEEEED for BAKED POTATOES!!!!! Someone get me an "I <3 Baked Potatoes" t-shirts, cause I'm not gonna lie: they are one of my most favorite foods in the WHOLE WORLD...and I never leave a DROP of that crispy skin:)

;) hahahahhaaha....yes, I've been working on that all morning;) ....oh well, now that you can cross "Read a Poem About Baked Potatoes" off your 'To Do' list for the day, I'll let you get back to your normal lives;)
