OK...so with last night's dinner, we're not talking "authentic Mexican" by any means...but that doesn't mean it wasn't AWESOME:) I used this recipe for Cooking Light's Mexican Black Bean & Spinach Pizza...sooooo, a special shout out to my vegetarian friends! This ones for you:)
I started by rolling out mini pizza rounds from my 99 cent whole wheat pizza dough from Trader Joe's. Then we threw them on the grill for about 5-7 minutes to cook one side...
In a bowl, I mashed up a can of rinsed black beans with 1/2 a red onion, a clove of garlic and a teaspoon of cumin & chili powder...
Once the crusts were crispy, we brought them in and topped 'em with the mashed black bean mix...
A layer of Tortilla Press SALSSSSSAAAA....
A sprinkle of Four Cheese Mexican Style Cheese...
And a mess of frozen & fresh spinach and a handful of fresh cilantro....then we threw them BACK on the grill to cook the bottom of the crust and to melt the cheese...
5 minutes later: Wahhhhhlllaaaaa...Perfect Mexican Cheesy Pizza!
Scott said this reminded him of a Taco Bell pizza...not a bad compliment:) But soooooo much healthier!! Whole wheat crust, black beans, spinach, tomato salsa, onions & garlic...the worst part was the cheese. Not too shabby at all...and the taste was DY-NA-MITE!!! :)
We're having a simple dinner tonight...and we're saving our big FIESTA dinner for Friday night, but I still have a few good ones wrapped in here:) Stay tuned:)
