Double Cornbread Pancakes....

So last night's dinner was another perfect way to use a bunch of ingredients we had laying around.  I combined two different recipes to make DOUBLE CORNBREAD PANCAKES...
I used:
  • 1 cup of cornmeal
  • 3/4 cup whole wheat pastry flour
  • 1 teaspoon baking powder
  • 1 teaspoon sea salt
  • 1 1/2 cups buttermilk
  • 1 tablespoon canola oil
  • 2 tablespoons maple syrup
  • 1 egg
  • 1 can corn (drained)
  • 1 tablespoon thyme
  • 1 handful chives (chopped)
Now I can't keep ANY sort of plants or herbs alive...HOWEVER, I am proud to say these chives came from my 'garden'  (aka.-they surprisingly re-sprouted from the plant my friend started for me last year...;)
Follow the Three C's ... ;)
  1. Combine all of the dry ingredients in a mixing bowl and mix with a whisk.  Make a well in the center.
  2. Combine all the wet ingredients in the 'well,' and mix till just combined.
  3. Cook like normal pancakes!

These made for savory, herby pancakes which STILL went great with some maple syrup and a ramekin of cantaloupe:)
Dinner tonight is going to be some leftover Arroz Con Pollo, as I have to run back out quickly to a 2 1/2 hour "hip opener" yoga seminar!  This should be ...interesting!  However, I hear we are holding the 'shavasana' (or the final move where you just LAY ON THE FLOOR), for the last 25 minutes...soooo, THAT should be nice and relaxing! :)  Have a great Friday & an even better weekend!
