Cookies for breakfast???

YES! And a healthy one at that! I finally got around to trying out another item that I've been hearing about on various blogs for awhile now: The Amazing Oatmeal Breakfast Cookie! So last night I went with the basic recipe of:
  • 1/3 cup oats
  • 1 Mashed banana
  • 1 Tablespoon Peanut Butter
  • 1/8 cup of unsweetened Almond Breeze
  • Lots o' cinnamon

I mixed everything in a bowl and poured it on a plate to form a "pretty" oatmeal cookie... And just popped it in the fridge until morning. POOF! DONE! And Oh my....let me tell ya, this was sooooo good! It almost has the consistency of cookie DOUGH, so now if only I could work chocolate chips and brown sugar in to the mix and still manage to call it healthy, that would be a good day;) But even sans the chocolate and sugar, this was a great, different and filling breakfast...Try it out tonight! Me thinks you'll enjoy it!
