Well, Antigua was a day I waited for...as it was a day I got to put a proverbial check on ye old "bucket list":) We got to swim with stingrays!!!! It was insanely awesome....they were totally gentle and calm....except when I tried to feed one and it left a hickey on my thumb:) Well, rays gotta eat, right??? ;)
And fortunately, they had the grand foresight to serve us rum punch AFTER our swim:) It was a ROWDY bus ride home...let me tell ya! Lots of fun:)
And don't ya know the van dropped us off RIGHT in front of an ice cream shop! Now I obviously love ice cream...but throw the word "homemade" into the mix, and my love just goes THROUGH THE ROOF! :)
I'm still trying to figure out what was "Australian" about it...tasted like any normal FABULOUS ice cream that you would eat on a random Tuesday afternoon in the Caribbean...aka.-how could it be bad?? ;) They SOMEHOW did not have a coconut flavor (blasphemy!!!), so we both got something equally as island-y: Macadamia Crunch with caramel swirls....
It was something different, but no ice cream could match that lovely little single coconut scoop I had in Tortola:)
And seriously, could anything make you more ready for a meal then facing death at the "hands" of a stingray barb?? :) (Ok, whatever, that was just my excuse for the day;)

I started with the crab cake with corn salsa...
Scott had the Mozzarella salad with arugula and basil...
For dinner I had the "catch of the day"...which happened to be cod fish coated in cilantro panko. Kind of appealing to think they might have dropped a fishing line right off the side of the boat, right?? ;) Well, maybe THAT didn't exactly happen but it was still incredibly fresh tasting...and I just love love loveeeeeeeeee fish and rice...it's just a masterpiece:)
Scott had pork tenderloin with lentils and a potato casserole....looking at all his meals again, I'm bummed I didn't sneak a few more tastes;) (could have been the dishes on top of dishes of my own;)
Although I did get a sneak of this...Scott's Dulce De leche cheesecake...it had the STRANGEST consistency. Almost like a gelatin base rather than a cream cheese. Either way, it was YUM! Just not your typical cheesecake us East Coasters are spoiled by...
And I went with the Pina Colada tart....of course;)
And since it was Caribbean night, we donned our most stylish island wears... ;)
And headed up to the pool deck for the midnight fruit buffet!

Here was my plate...I had a bite of everything and was done...except for that little pistachio cream puff on the bottom right, I could have eaten a dozen of those;)That's a wrap on Day 4:) Oh wait, one other thing. Me & Scott collect magnets and mugs on all our travels...and look at this little cutie I picked up! Loved it!
