Well, now we proceed to the OTHER end of the spectrum from this morning's
post, as I show you my latest "culinary adventure": A "
How to Make Italian Cheese" cooking class that I took with a friend on Saturday afternoon!
Here we are learning how to make fresh mozzarella. Well, my friend is doing all the work...me & the woman in the green are just
checkin out the situation... :)

We also learned how to make fresh ricotta (which was just TOO. DIE. FOR...so fantastic!!) & sale cheese...which was the same as mozzarella, but you use a yellow curd to form a firmer cheese, rather than the soft white curd.... (
do you feel "cheese smarter" already?? Thought so! ;)

And as our "grand finale" for the class...we made a
FIVE cheese pasta baked in parchment.....did you feel your cholesterol go up a few notches just reading that?? :)

We used ricotta,
mozzarella,
Parmesan,
asiago and
Swiss...not to mention the heavy cream & butter.....;)

Totally worth it....just look at that amazing cheesy goodness!!!!

There was also a loverly plate of the fresh mozzarella with tomato and basil. Life doesn't get much better than this:

Well, after that, we were all cheesed out! Well, until I start using my "take home leftovers" in my meals this week! Hahahahahahahhaa...stay tuned!

i use to work at the cheese department at wegman's. i use to make the fresh mozzarella all the time. and i had to wear like 10 pairs of gloves because the water was so hot!! there was some good cheese there and i did get cheese smarter there!!! oh and i use to crack the huge wheels of parmigianno reggiano. there is nothing better then fresh PR!!!

That five cheese macaroni & cheese looks DELISH!! and of course the mozz, tomato and basil, that's a personal fav :)
