So I'm finally getting around to my Sunday mornings breakfasts...where I tried to work one of my favorite fall desserts into the first meal of the day: Apple Crisp Pancakes...

I started by mixing up the Oatmeal pancake mix with milk & Eggbeaters. Then I added a chopped up apple...

Next, I went a little crazy and poured a whole mess of cinnamon, nutmeg AND apple pie spice in the mix...

In a small saucepan on the side, I mixed a little oats, brown sugar and butter and let them heat up for a few minutes. (forgot to take a photo in my concern of NOT burning the oats!) I poured the pancake mix onto the griddle and topped them with the oat mixture, so when I flipped the pancake, the oats kinda toasted up and formed a CRISP on the 'cake...

These were
sooooooooooo good! Spicy, warm, fluffy & CRISP all at the same time:) And these went perfect along with another item we had picked up from Grenada:

for see myself making these A LOT come September:) Until then, I'll just have the warm spicy memories to carry me through until FALL! ;)
