originally wanted to make a VERY green dish for dinner tonight...but the avocados at the store were NOT ripe enough to use right away and a small bag of basil was $3.99! No thanks! :( So I went back to "Plan A" and made one of our favorite "light" dishes...
Chicken with Leeks and Couscous. Kinda green, right???

And since Scott was extra hungry, he decided to toss in a can of white beans for extra bulk. Which totally did the trick, because usually we PLOW through chicken with leeks...but tonight I managed to leave almost a half (well, maybe a quarter;) of the dish. Pretty good for tonight!
And after our completely dreary and rainy weekend, it has been BEAUTIFUL the last 2 days!!! Perfect for sneaking in those extra walks at lunch time! And to celebrate: look how pretty these flowers were from my Father-in-Law for my birthday....

I trimmed them tonight and
arraigned them in the vase and I thought they looked SO pretty! However, knowing my track record: Now that I've cut them, they should be dying in about 12 hours, so I'm glad I got this picture while they still looked good!! :)
Spring is on it's way folks!! :)
