Well, my post today is not NEARLY as exciting as all my lovely weekend eats...BUT I still had a few things to show you. Including my lunch from yesterday: I made Ellie Kriegar's Honey Harvest Quinoa. This is actually a breakfast dish, but I figured the pecans, apples & craisins would keep me full enough throughout the afternoon as well....
Warm cinnamon + sweet honey = Lovely:) Perfect for...dare I need to say it again?? :) The word "Harvest" IS in the title after all ;) hahahahahha...
And yes...it did keep me full for a long time....butttttt even with a snack of strawberries & a sweet and salty almond granola bar (from Target of all places...yum!), I STILL managed to come home completely STARVING after Pilate's class last night! (As in "Do not talk to me until I get some food" hungry;) hahahahahahaha.....so my salad was a mish-mosh of the quickest things I could possibly throw together;)
Grilled chicken, onions, carrots, 1/4 avocado, sliced strawberries, a few croutons and....2 tablespoons of light 1,000 island dressing. I know, I KNOW...it was weird, but it sufficed;) Truth be told I was NOT in the mood for salads last night. Mainly because I'm VERY excited about what we're having for dinner TONIGHT (stay tuned) and my salad paled in comparison:) hahahahahaha:)
And I DID steal a bite from Scott's slice of Emery's blueberry pie last night. Honestly, I'm not much of a 'cooked blueberry' fan (in direct contrast to my 'no raw tomatoes' issue;), so that bite might be all I have of the pie...but I thought you might like a picture, since it is quite pretty;)
Although I'm ready to test out that blueberry ice cream tonight:)
