Leek & Zucchini Spaghetti....

Talk about 'no carb' pasta;) hahahahhaahha.....We took last week's zucchini salad up a couple notches.  I broke out my mandolin again and made this:  Leek & Zucchini 'Spaghetti' with Shrimp...

I took a little help from Trader Joe's and used their already "Trimmed Leeks", but any ones would be fine.  Just make sure to soak them in cold water once they are shredded, because there can be a lot of dirt and grit hidden in all of those layers....
I julienned 4 leeks & 2 zucchini.  Now...not gonna lie, the leeks were A LOT tougher to julienne than the zucchini.  You had to be VERY careful with your fingers and I had about 3 leeks worth of leftovers because I did not want to shred too close!  (although I saved them for a side dish for another time)  The zucchini was MUCH easier...but not as tasty;) 

While I was julienning my fingers the leeks & zucchini, Scott sauteed a pound of shrimp in garlic (lots & lots of garlic!), olive oil and a little butter.  Once they were cooked (about 5 minutes), he removed the shrimp from the pan and put them off to the side.  In the same pan, he heated up a little more olive oil and MORE garlic and added the leek & zucchini spaghetti...I can't even TELL you how amazing my kitchen was scented while this was cooking!

Meanwhile, I heated a handful of seasoned bread crumbs in a dry skillet until they were golden brown and toasted...

And once the leeks & zucchini were cooked (keep testing to see how much 'bite' you would like to have to 'the noodles'), we added the shrimp back to the pan with about a 1/4 cup of white wine and about a tablespoon of butter.  Stir and simmer for 2-3 minutes...

Finally, I topped the pasta with a small sprinkle of the toasted breadcrumbs (for crunch & flavor) and a small sprinkle of fresh parsley (special shout out to my "fresh herb dealer";)

The zucchini may have given the dish it's 'volume,' but the leeks had allllll of the FLAVOR!  KNOCK OUT FANTASTIC!  The toughest part of this whole dish was julienning the vegetables (since you have to be SO careful), but the REST was a SNAP!  And just so delicious! 

For dessert, I had to sample this....
Now Trader Joe's "Joe-Joe cookies" are SLAMMIN (LOVEEEE the vanilla/vanilla ones!), so imagine those cookies added to ICE CREAM!  It's IMPOSSIBLE to be bad;)  Scott said it was like cookies & cream and whipped cream all mixed together and frozen:)  Nonnnnee too shabby;) hahahahhhahahahaha....

Well, after 2 days of different dinners, tonight is going to be pretty basic;) hahahahhahaa...Have a good Thursday! :)
