So I cracked open one of my new cookbooks to search for a dinner for last night. Scott gave me this for my birthday, so I figured he would appreciate a meal from here;)...
And I know (I KNOW) I have said that a lot of our meals have been "all-around perfect" lately...but I gotta tell ya: I ain't lyin! They have been REALLY GOODDDDD....and here is yet ANOTHER one! Pan Seared Prosciutto Pork Chops with Sage & Capers....
FLAVOR. EXPLOSION! There are no other words to describe it! Salty prosciutto with crispy sage, tangy/salty capers and a lemon/butter sauce...oh my! And best of all, it took all of 20 minutes to make....
The recipe in brief:
- Wrap the trimmed pork chops with a slice of prosciutto. Heat about a tablespoon of oil in a pan on high heat, add the pork chops and sear until cooked through.
- Remove the pork chops and add another tablespoon of oil to the pan. Throw in about 12 sage leaves and let them cook for 1 minute.
- Turn off heat and add 1 tablespoon of butter, the juice of 1 lemon and 2 tablespoons of drained capers and swirl until heated.
- Drizzle over chops for an amazing dinner!
Fantastic! I've never even used capers, but figured there are about 10,000 things I've never had and have tried since I moved in with Scott...so what's one more?? :) And why didn't anyone tell me how good they are?? Those capers are little salt nuggets...and as a salt luvah, I did indeed enjoy them;) hahahahhaa....
As our side, I made some couscous with chicken broth and some curry powder for an extra flavor kick...
I rounded out our dinner with a side of steamed spinach. And all I can say is: GO HOME AND MAKE THIS! YOU WILL LOVEEEEEE IT! It was SO easy and had soo many amazing flavors in one dish!! (And it looks sorta pretty too;)
Keeping with my 'salt theme' of the evening, I finished up the last of the sweet/salty Buckeye State Jeni's ice cream...delish! :)

And if it's anything like our LAST get together, where we ate for about 23 of the 24 hours we spent together, it shouldn't be a problem:) It's the Italian way of saying "I love you" :) hahahahahahahha.....
