So yesterday's "morning headache" stretched into a day-long event! OY!! So I GLADLY passed off the cooking reigns to Scott for the evening:) And I was quite pleased, as I was awaken from my cat nap to some loverly smells wafting from the kitchen:)
He made quite an awesome Balsamic Chicken with White Beans & Spinach, topped with the LAST of the smoked mozzarella....soooooooooooo good! He said we need to have spinach & beans as a side dish more often, since it was really good (and filling!!)
However, I DID help with the side dish:) Seriously, how cute are these potatoes?? (I found them at Trader Joe's, of course:)
So Scott sliced them in half and mixed them with olive oil, salt, pepper & LOTS of fresh thyme....(my cooking duties for the evening were relegated to stripping the thyme from its 'branch'..hahahahahaha ;)
And then we popped them into the (blessed) toaster oven for about 40 minutes to get them nice and crisp....so good! (particularly mixed with a little of the balsamic and stray melted mozzarella leftover in the pan;)
And not much can cure a headache better than a little ice cream, no?? (actually, that's probably 'medically' counterproductive...but oh well, it made me feel better:) And I was treated to a "JUST ENOUGH" marshmallow sundae from the all-to-tempting Dairy Queen that's pretty much around the corner from our house...TROUBLE! :) hahahahhaha...
And after dinner & DQ, I felt good enough to get my 'bake on' for a 'work treat' this week...in the form of Lemon Glazed Coconut Bars. So far, they've been a hit! :)
Well, it looks like we're taking a night off from cooking tonight to go enjoy the 'summer pleasure' of eating outside somewhere:) Where to go? Where to go? :)
