So after all that exercise chatter yesterday...let's get back to the food, right?? :) Dinner last night was completely summer-y! We had dueling flatbreads for dinner;) (or pizzas, but flatbreads just SOUNDS healthier, no?:)
We started with whole wheat dough rolled out into small ovals. While Scott was busy grilling the dough, I got busy mixing up the (low fat) ricotta cheese topping for both...
Scott went the traditional route and I mixed up the ricotta with salt, pepper, crushed garlic & oregano...
While I took a step on the SWEET side and whipped up the ricotta with a tablespoon of honey and some cinnamon...
Scott brought the crusts in and I slathered the mixes on the cooked side of the crusts...
And finished them off with the toppings: grilled tomato, basil & olive oil for Scott...andddddd for me: a mix of grilled and fresh chopped PEACHES with cinnamon basil!!! (courtesy of 'my herb dealer':)
This dinner was putting to use the BEST of what summer has to offer...fresh ingredients! The honey-kissed cheese with the mildly tart & VERY smokey peaches mixed with the chewy crust and just the SUBTLE kick of cinnamon in the basil all blended together just as I had hoped! :) Wonderful!
And ya know...how could this be bad?? I even had to steal a bite because Scott was chewing just too slowly and I had to help him along since the smoky, garlicky whiffs just kept dancing past my nose;)
Again, I can't stress the awesomeness of the grill on pizza dough! Roll it out thin enough and it is cracker-y crisp, but will still hold up to all of those toppings....just perfect! You MUST try it!!
For dessert last night, I reached into the freezer for this...
"Light Touch Foods" makes these AMAZINNNGGGGG frozen "cheesecake pies" in all different flavors. But, GASP, shockingly enough...coconut is my favorite:) It tastes like a frozen cheesecake mixed with a coconut cream Tastycake pie all with a mere FRACTION of the calories & fat. 136 calories, 4 grams of fat and 8 (EIGHT!!) grams of PROTEIN for this whole little pie! Awesome!! :)

Is it Friday yet?? This week was going pretty quick, till I woke up with a headache this morning! Isn't that the worst??? Coffee, STAT! :)
