Egyptian-Spiced Chicken

Our "no menu" Wednesday plans seem to be working out pretty a-ok:) Again this week, we were faced with another glaring gap on our weekly menu list, but we managed to pull out another great meal! Egyptian-Spiced Chicken with (my very photogenic) black rice and roasted artichokes....
Chicken ~> http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&recipe_id=1911378 sooooo good! The coating was a mix of almonds, sesame seeds, cumin and thyme. It had a different flavor for each and every bite...yum!!

Rice ~> I brought 2 cups of chicken broth, 2 crushed cloves of garlic, some cumin and a drizzle of sesame oil to a boil. Then I tossed in a cup of rice and let it simmer on the stove for a half hour. Boom....beautiful and flavorful "forbidden rice!" :)

And lastly, oh my sweet artichokes from Trader Joe's...SOOOOO good! I rinsed em and threw em on a cookie sheet with a drizzle of olive oil, salt, pepper and garlic powder. Roasted them for about 20-25 minutes at 350, turning them a few times. And then I sprinkled them with feta cheese when they came out of the oven. We are DEFINITELY having those again!!!! YUM!!!


Snow central is still brewing like crazy in NJ!!!!! And now all I want to do is bake and cook this weekend but I CAN NOT be snowed in with mounds of goodies, especially with the Superbowl looming on....:) I think I'm just about finished planning my menu for the big game, so I'm pretty excited to try out a couple new surprises ;)

OOh or maybe I'll make this! It looks really good. ALTHOUGH every time I add sesame seeds to anything, Nick or Sonny asks "is there peanut butter in this?" haha I can't win.

Travesty...Peanut butter AND sesame seeds?? There 2 of the best stuff on earth:)
