So we had a perfect "snow day" dinner & dessert....First we'll start with the PIZZA! One of our old favorties that we haven't had in TOO long...Thai Chicken Pizza!

Trader Joe's:) (or Trader Giotto's, as the bag said;) This dough was 99 Cents, people!!! How can you beat that??? I have white & garlic herb dough from TJ's in my freezer too, but we went with this 100% whole wheat dough....
We had to substitue celery for the cucumbers because that was all we had in the house and ummm, no one was going out in the snow for cucumbers;) But the best part about this pizza was the textures: Soft crust, gooey cheese and the CRUNCH of the celery, bean sprouts and PEANUTS! :) YUM!!!! And my big surprise dessert: SNOW CREAM!!! :)
I had been reading about snow cream on the internet for awhile, and with this "big storm" coming, I thought it was the perfect time to try it out;) I was planning on making this Paula Deen "recipe" ~> http://www.foodnetwork.com/recipes/paula-deen/snow-ice-cream-recipe/index.html, but to my SHOCK, we were out of sweetened condensed milk:( Travesty! I attempted to make my own...but it was GROSSSSSSSS....WAYYYY to sweet...
So we improvised;) I mixed both dishes with a little fat free half & half for the "cream"...and then I mixed my dish with sugar free Malibu rum syrup and a sprinkle of coconut (of course;), while Scott mixed his with some pure maple syrup...
To quote Scott: "I feel like a Quaker in the 1800's"....however when he tasted it, he said "the sad thing is, that's really good." And it was!!! It was like a SUPER lite and airy shaved ice;)
Try it out the next time it storms;) And hell, how many calories can snow have?? ;)

I really want to make this. We took Sonny for Thai a couple of weeks ago and he loved it. Do you taste the PB and do you think it would be ok to omit? How is it possible that my 2 favorite people have issues with pb??? :)
awwww...hahahahahahahahha!! No, you couldn't really taste the peanut butter, so I think it'll be fine to skip! Sonny's so wordly! I love it!
