"Olympic Dinner with an American Twist..."

So, my big plan for our "Opening Ceremonies" dinner (kinda sounds like we were competing IN the Olympics, huh??:) was Poutine...which are french fries with cheese curd, gravy and onions. And after I saw the recipe in "Cooking Light" I was SET. However, after a last ditch, unsuccessful trip to find duck fat and cheese curds from Wegman's...we had to improvise....so we improvised with this:
Rachael Ray's Dinner Size Texas Chili Cheese Fries (didn't I say American twist??)
I know, I know...this is total junk food for dinner, but if your gonna have Chili Cheese Fries...this is not a bad way to go. We lightened it up by:
  • Swapping Smart Balance for the butter...
  • Swapping lean ground turkey breast for the meat...
  • Swapping 1% milk for the whole milk...
  • Using low fat cheese...

I'm sure those few swaps that you will never, ever notice will save you tons of calories, fat & saturated fat.

For dessert I sampled one of my Nanaimo bars....wow, were they sweet!! But they had a great, fudgy consistency:) And the nice thing was, a couple bites and you were completely satisfied!

I'm gonna be cookin up a storm today for my Valentines' Dinner for Scott! I think he's really going to like it! :) And then tomorrow he's taking me to a surprise Valentines lunch...I was warned it was "nothing fancy, kinda cheesy, but we'll like the food and it's very blog-friendly." SOLD! I'm excited!! :)
