Blog-inspired Breakfast & Lunch

Can we say FABULOUS??? I got this recipe from one of my favorite blogs ~> http://iowagirleats.com/2009/10/26/getting-wimpier-by-the-day/. As soon as I saw it last night, I knew I hadddd to make it for this morning (esp. since I STILL had leftover pumpkin to use up...)
SOOOOOOOOOO delicious!!!! The brown sugar and almond topping were THE BEST!!!!!!!...and it tasted JUST like a bowl of FALL! Oh my! For those who don't know, I love Fall JUST ABOUT as much as I love coconut...and that's A LOT!!!!!
And it DID NOT help that I was wearing my very Fall inspired orange shirt today...sighhhhh...it might as well have been mid-October in my cubical...

For my lunch, I decided to break out the new Griddler express we got from Scott's Dad & Stepmom for Christmas... (Hi Lee & Lucy, if your reading this!!:)


I decided to try out chicken breast for a quick lunch and wondered why, after 10 minutes, the chicken still looked raw. I said out loud (to no one) "Is this thing even on?"...which is JUST about the time I noticed this magical little knob on the side...
Genius:) 4 minutes later....
Now that looks better!!!...well, sorta:) I don't know WHAT I did when I trimmed and pounded the chicken...it kinda ended up looking like a map of Europe... (are you trying to tell me something, chicken??;)
So here comes the fun part...I saw this on my OTHER favorite blog ~> http://pamperedwithpaige.typepad.com/ and knew I had to try this! It's Fire Roasted Red Pepper Sauce with Goat Cheese from Whole Foods....soooooooooo up my alley!!!!
(yes, I'm still using my holiday silverwear...it's hard to let go... ;)
So yummy! My phone camera does ZERO justice to the color of this sauce! It's so pretty!! Definitly a good lunch match!!!
I'm running to Shop Rite at lunch to get my weekly shopping out of the way before the big storm CRAZINESS occurs! Who am I kidding? I'm sure the NORMALLY insane Shop Rite is going to be crazy to the 100th degree by this afternoon!!
