Nanaimo Bars

So, in case you don't know, I LOVEEEEEEE the Olympics! LOVE LOVE LOVE!! I love the Summer games just a bit more cause I'm a HUGE gymnastics fan (yes, I'm putting that out there!)...but winter is so amazing too!!! Especially because I remember Scott and I watching a snowboarding race and rewinding it about 20 times during the last Olympics because about 12 people fell on the way down...we were DYING!! It was amazing:) But anyway....

Here is the dessert I made for tonight! They're actually a "Canadian classic" that I stumbled on in a WEIGHT WATCHERS magazine (if you can believe that!) So I thought in honor of the Vancouver Games, this was a perfect time to try these out! So here ya go:


Nanaimo Bars
($1 to anyone who actually knows the CORRECT pronunciation of these:)
Adapted from Weight Watchers Magazine
  1. Line a 9-inch square baking pan with plastic wrap. Melt 1/4 c. light stick butter in a saucepan over medium heat. Add 1/4 c. sugar, 1/3 c. unsweetened cocoa, and 1 egg; cook 1 minute. Stir in 1 c. low fat graham cracker crumbs, 3/4 c. rolled oats, 1/2 c. unsweetened shredded coconut and 1 tsp. vanilla. Pat the mixture into the bottom of the pan. Freeze until firm, 30 minutes.
  2. With an electric mixer, beat 4 tsp. light stick butter and 1 Tbsp. fat-free milk. Beat in 2 c. sifted confectioners' sugar and 1/2 tsp. vanilla. Spread over the crust and chill 15 minutes.
  3. Microwave 2 oz. bittersweet chocolate and 2 tsp. light stick butter 10 seconds; stir. Spread over the filling; chill 2 hours. Cut into 20 bars.

Per Serving: 1 bar: 145 calories, 6 g fat, 2 g fiber. (<~It might actually be less because I omitted 1/4 c. of chopped walnuts that they used)

And in "I didn't need to know about these" news...I like graham crackers, but they are far from my favorite. Until, of course, I stumbled on these while looking for GC crumbs for the bars....

ps-I caved and had a nibble of the Momofuku cookie....soooooo good! Totally different taste than your run-of-the-mill cookie!!
