I'm so bummed...because the pictures I took yesterday did absolutely ZERO justice to the magnificence that was last night's dinner! We had Gorgonzola Chicken Breast with Strawberry Gastrique, cheese grits & pan roasted corn and peppers....oh my heavens....
Now I KNOW you might be leery about this...but you gotta trust me on this one: IT. WAS. PHENOMENAL. Just like some people pair fruit with cheese (I know of at least of FEW of you that do this;), it's the same concept here. The 30-minutes cook time for the sauce made it syrupy-thick, which went along AMAZINGLY with the salty cheese & prosciutto. TO DIE FOR!
No words...I finished this off in about 3 minutes, and then was sad because it was GONE;) hahahahhaha.... And for the record...instead of 'stuffing the chicken' as the recipe suggested, we simply grilled up the chicken, topped it with the cheese, prosciutto & thyme, and put it in the blessed toaster oven for about 5 minutes to melt the cheese. Easy peasy! :)
For a side, I wanted to do something with fresh corn on the cob again...so I sauteed 1/2 a red onion in a small amount of olive oil, and then added the 'de-cobbed' corn, a diced orange pepper, salt, pepper and a little of the fresh thyme. So easy and so good!
And unfortunately, the cheese grits were the MOST un-photogenic of the bunch;) ...but they were pretty tasty too:) I even threw a little thyme into the pot to tie everything together;)
The next folks to visit for dinner are getting this dish;) It made for a nice presentation (Aside from the super bright pictures), was VERY easy to make in advance and quite different from the normal Tuesday night chicken;) hahahahahhaha....
We have another interesting one tonight, where I'm gonna put my mandolin to work again;) Stay tuned;)...

I saw you were making this chicken and I couldn't wait for you to try it so I would know if it was worth trying :) It looks really good - so glad you loved it!
