A Red Wrap Up....

Well...like I said:  After pie & lasagna, it was back to the grind for Valentines day:)

For breakfast I packed this Chobani Mango yogurt.  OK, my favorite Chobani pineapple yogurt may just have a new rival!  This one was sooooo good!  Super creamy and sweet from the mango....four star! :)  Both the pineapple & mango yogurts taste like DESSERT (always good in yogurt, right?? :)

For lunch, I had some leftover eggplant stew with a Vitatop corn muffin.  Sniff...it was just not the same without the polenta...sniff:(

And for snack....some of my sesame almonds:)  I still can't get over how GOOD these are.  Those little sesame seeds just work miracles combined with almonds:)
Annnddd it was also back to the normal Monday workouts as well:

Monday Morning:  3 Mile Walk away the pounds with 8 pd. weights

Monday Night:  1 hour Pilates class

Although, for our Monday salads I tried to keep it as "festive" as I could...

...by adding as many specks of RED as I could find....

In the mix:
  • Herb Salad
  • Beets
  • Blueberry Goat Cheese
  • Craisins
  • Red Pepper
  • Pomegranate Seeds
  • Carrots
  • Scallions 
Mmmmmmmmmm....and it made a pretty good mix, if I do say so myself!  Another salad where I thought I would need dressing, but instead had more than enough flavors from all of the yummy add-ins;) 

And ALRIGHT...even though I trrrry not to eat dessert on Mondays, the call of some sort of "official Valentines day celebration" was just too great to ignore.  So we decided to delve into our treats from "Sweet Eats"....

Is there anything more appropriate then Red Velvet for Vday??
(Well....I guess no one gave Scott the memo, but Carrot Cake is one of his FAVORITES...so it's all good:)

And in the spirit of MONDAY, I enjoyed half and saved the rest of the monster cupcake for another day;)
Mmmmmmmmm...and it was soooo good!  Moist cake with a buttery cream cheese frosting making it super sweet but just a little savory.  I wish I had the other half right NOW! :) hahahahahahha

So, that about wrapped up Vday at our casa....although there may be another little treat for our furry Valentines one of these find days;)  She does give lots of love all year round:)
