Soooo...I thought this recipe might come in handy for you guys this weekend if you're having a Superbowl party. It combines 2 of the "classic" football foods= Buffalo Wings + Chili! :)
You start by browning 2 pounds of chicken in a pan coated with a drizzle of olive oil & a tablespoon of butter...breaking up the chicken with a spatula as it cooks....
Next, you throw in the flavor FOUR-fecta: 2 chopped celery ribs, 1 chopped carrot, 1 diced onion and 4 minced cloves of garlic....
And finally: The BIG guns!
- 15 oz. can diced tomatoes
- 1/4 cup hot sauce
- 6 oz. beer
- 8 oz. can tomato sauce
Add the beer to the pot and scrap up any flavor "bits" from the bottom of the pan. Allow the beer to boil down for a few minutes and then throw in the rest of the ingredients. Let the chili simmer on low for 15 minutes. Easy right?? And it packs a heated PUNCH!
While the chili is simmerin, you can work on the BEST part of the meal: THE BLUE CHEESE CORNBREAD TOPPERS! Mix together:
- 1 box corn muffin mix (preferably one withOUT hydrogenated lard in the ingredients!)
- 1 egg
- 1/3 cup milk (adding more, if needed)
- 3/4 cup blue cheese crumbles
- 2 Diced scallions (we were out, so I subbed some finely chopped leeks...anything in the 'onion family' should work;)
Mix everything together and cook like normal pancakes on a greased griddle. DO NOT SKIP THESE...they are da bomb! :)
Serve the chili with a cornbread topper...OR even better....stick one in the middle of the chili as a little blue cheese SUR-PRISE when you're diggin in :)
I made this for a "chili cook off" at work today, but it's a good thing I saved Scott a little bowl's worth...this is one of his favs:) Hope the work peeps like it too!

I always forget about my yoga DVD led by the Dallas Cowboy Cheerleaders;) hahahahahah....this one was over before I even realized it, but was STILL a decent workout. The trainer was in LOVE with chair pose and prayer twists...my legs were BURNIN!
