So...."New breakfast obsession of the week" alert! :)
Don't worry....I'm not turning my back on my whipped oatmeal, but I just can not get enough of these English muffins with strawberry cream cheese and banana (+ leftover banana with MORE cream cheese;)
Heaven help me when I try the PEANUT BUTTER CREAM CHEESE...these might just become my 3 meals a day;)
Dinner last night was super quick & super flavorful (we have a lot of those combos, huh??:)
First, we had pork chops marinated & baked in our favorite stir fry sauce: Garlic & Green Onion. Which I'm fairly convinced would taste good even slathered on my shoes;) It's just SO GOOD! We need a case;)
For a side dish, I boiled up some of this Israeli couscous....(which totally reminds me of one of my childhood/STILL favorites: pastina:)
It takes a little longer than regular couscous, because you toast up the 'pearls' for a few minutes to bring out their nutty flavor....
...and then you simmer on low for 12 minutes. A little extra effort than 5 minute couscous, but this version is a little more hearty.
To kick up the flavor, we threw in some of the fresh tabbouli! Mmmmmmm....parsley, onions, tomato & mint = low fat/high in flavor!
And finally: peas;) Which, ya know....are just peas:) hahahahhahaha....
And for dessert, I got in my chocolate fix with one of my Vitatops; Banana Fudge this time! (I've been missing them since I've been swapping up my breakfasts lately:) Defrosted for a half hour and tossed in the microwave for 30 seconds and topped with a little light whipped cream, these are SUPER low cal "brownie sundae" swaps!
And finally: My workout for Wednesday:
Wednesday Morning: 30 Minute Pure Power Yoga
Thankfully, I wasn't as DEAD as the last time I did that one;)
Sooooo...I almost forgot that it's Miz Helen's Full Plate Thursday! I love when Thursday creeps up on me:)
And in honor of Thursday: It's suppose to be SIXTY degrees today in Jersey! And tomorrow is suppose to be the big 6-5! Crazy, right? Oh February...why do you tease us so?? ;) It's only gonna make that 30 degrees feel THAT MUCH COLDER next week;)
