Spice & Ice...

So last night's dinner was super easy but super HUGE in flavah...
(based on this recipe....)

We had tandoori roasted chicken.  Now to make true tandoori you need to cook the food in a huge clay oven.  And since our kitchen was clean out of huge clay pots...we just cranked up the oven to 500 and coated the chicken in the spicy tandoori yogurt sauce...
A great SPICY mix of:
  • 1/2 cup Greek yogurt
  • 4 minced Garlic Cloves
  • 1 tablespoon Ginger
  • 1 tablespoon Chipotle Chili powder
  • 1 teaspoon Coriander
  • 1 teaspoon Cumin
  • 1 teaspoon Cardamon
  • 1/2 teaspoon Paprika
I pounded the chicken breast into thin strips & coated it with the yogurt mix.  Place the chicken on a foil lined baking sheet and roast in a 500 degree oven for 20-25 minutes...
I love how the yogurt keeps the chicken moist, but the bottom was almost caramelized from baking in the high heat.  And the yogurt just adds an incredible tangy burst of spice!  Soo good!

And the side dish...oh, the side dish....was awesome:  Mashed chickpeas!
Why don't I make these more often??  They are SUPER easy and sooooooooo delicious!

I pulsed one can of drained chickpeas through a food processor to chop them up.  Next, I added the chickpeas to a skillet coated with a drizzle of olive oil and a few cloves of minced garlic.  Let them heat up and then add one of my FAVORITE ingredients:  Tahini! ...
Tahini is like peanut butter, but made with SESAME seeds!  Soooooooo good!  Add a few tablespoons of tahini and a 1/2 cup of chicken (or veggie) broth and finish mashing.  If you like hummus, you'll LOVEEEEE these!  Super smooth & super flavorful...total winner!

And last but not least, peppers & onions sauteed in a little olive oil.  Always yummy:)

Whichhhhhhhh, brings us to today....which involved THIS.... 


Yep, we woke up to a niceeeee shellac of ICE on all surfaces;)

But that also meant....
Yeah!  And Regis actually made it into work today! :) hahahahahhahahahaha....

Ohhhh...and breakfast was a GREAT one!  I was craving some warm baked oatmeal, and since we were out of bananas, pumpkin AND sweet potatoes, I went with a NEW spin on things:  Baked Spiced Apple Crisp Oatmeal! 
  • 1/2 cup dry oats
  • 3/4 cups unsweetened vanilla almond milk
  • 2 teaspoons brown sugar
  • 1/2 diced apple (saved the rest for a snack this afternoon)
  • 1 teaspoon vanilla
  • 2 teaspoons cinnamon
  • 1/2 teaspoon cloves
  • 1/2 teaspoon cardamom
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon all spice
(after adding all of these spices, I figured Apple Pie Spice would have been good too:)
Mix all of the ingredients together and pour into a small baking dish.  Bake at 375 for 15 minutes.  While the oats are baking mix:
  • 2 teaspoons chopped pecans
  • 1/2 teaspoon butter
  • 1 teaspoon brown sugar
Add to the top of the baked oatmeal, and cook for 10 more minutes.

Sooooooooooooo good!  So warm and SUPER spicy!  Totally hit the spot!  (the only thing better would have been a little sprinkle of sea salt...hahahahhahaha...;)

OH!  And one more thing!  My workouts from yesterday:

Tuesday Morning:  Body by Bethenny:  40 minute yoga

Tuesday Night:  BBBethenny 10 min weights x 2 + 5 min. "booty blast" x 2 = 30 minutes.

Let me tell ya:  The yoga felt like a DREAM in the morning, but the weights at night were a KILLLLLLLLER!  It must be a "weak week" :)  My balance was spot on, but my strength is NOT great this week.  I cursed B out for almost that entire 30 minutes;) hahahahahahahah...  Even this morning's workout was tough (more about that tomorrow)

That oatmeal sounds heavenly, especially on these cold winter mornings! Alfred prefers rice pudding, but I(Ashlie)'m an oatmeal gal all the way. I share your love of yoga too and look forward to visiting your blog more often!
