New Day...

Well, yesterday was a true 180 from Sunday:)  I just woke up SO READY & motivated for an "EXTRA healthy" day:)  I packed my bag with all of my "lighter" favorites:
  • Peppermint Vitatop
  • Celery with 2 tbs. Almond Butter
  • Clementines
  • Apple
  • Cracker Barrel 2% Cheddar Cheese sticks
And TONS of water! 
I drank water like I was being led to the desert for a month & a half!  For real, yesterday I figured I downed about 84 OUNCES:) 

Plus, I was VERY ready to work out yesterday.  I had skipped my Saturday morning Power yoga class this week, and let me tell you:  I felt it!  I just felt so "jammed up" all day....I got to class yesterday afternoon and could not. stretch. enough!  So yesterday included:

Monday Morning:  45 minute random mix of jumping jacks, jumping rope, squats, knee lift jogs, weight sets and my personal nemesis ~> running up and down my stairs for a good 5 minutes straight.  THAT'LL get the heart pumpin, for sure!

Monday Night:  1 hour Pilates class

And since the mercury hit almost 50 DEGREES in NJ yesterday...I even got to stretch out the ole legs for a good 2+ mile walk during my lunch break.  It felt positively APRIL out  (minus the need to seek alternative walking "routes" since a lot of my normal ones were blocked with snow;) hahahahahahaha....

And I was also super ready for salad when I came home last night! 

I made a chili/chipotle dressing to give it a little extra "Southwestern Flair"...
  • 1/2 cup 0% Fage Yogurt
  • 1 tablespoons Chipotle Chili Powder
  • 1 tablespoons Chili Powder 
  • 2 teaspoons Sweet BBQ sauce
  • Juice of half a Lime
  • 1/4 cup chopped cilantro
  • Sea Salt
I mixed the dressing along with:
  • Mesclun Mix
  • Diced chicken, coated in cumin & baked
  • Avocado
  • Black Beans, drained & rinsed
  • Corn, drained
  • Diced scallions
The dressing was nice and cool against the heat from the chicken & spices.  I felt soo refreshed after this one!

Well, after that 'almost' spring like day yesterday, I hear we're suppose to go back to that lovely number of 15 later tonight;)  OY!  Even though I love winter, I can't stop dreaming of our (what should be) warmer trip in a month!  Can't wait:)

ahh, i feel you on the water, i am forcing myself to drink 100oz daily...i feel all i do it run to the bathroom now

how do you even DO that?? I drank the 84 yesterday and thought I was going to swim away:) hahahahahhaa....
