Magic Oats?? :)

So I woke up Saturday morning armed and ready to try out a new 'recipe' that I had been hearing about online for a while now:  The infamous  Whipped Oatmeal! 

You mix:
  • 1/3 cup oats (not instant)
  • 1/2 cup water
  • 1/2 cup milk (Unsweetened Vanilla Almond Milk)
  • 1 Banana sliced verrrry thin
Add everything to a small saucepan and bring to a boil.  Once the liquid starts simmering, use a spoon and stir the oats vigorously.  Like MAGIC...the banana begins to melt INTO the oats creating a creamy consistency....
(believe me: I didn't think this was going to work either...but it DOES!)

When the oats were almost done, I tossed in a teaspoon of vanilla and a handful of...are you ready??  Chia seeds:) 
Yes...as in THAT Chia:)  I had been hearing about the benefits of these babies (HIGH in Omega 3's, protein, antioxidants, lowers blood pressure, etc) for awhile and finally decided to try em out when I spied them in the bulk bins at Whole Foods yesterday.  You couldn't taste them at all....but hopefully they're working "their magic" :)

Anyway, after 5 minutes of whipping the oats, it produced a HUGE bowl of...dare I say?...what tasted like oatmeal 'pudding'??? 
The oats were super light and airy and the banana was fully melted in the oats...Magic, people!  Pure food MAGIC:)  (sorta like that amazing banana custard:)

I topped the oats with a big tablespoon of Almond Butter...YUM! 
I don't know if it was the almond butter, the oats or the little miracle seeds...but I really wasn't all THAT hungry for nearly the rest of the day!  And even if THAT is the ONLY benefit of Chia seeds...let's just say:  I'm buyin another round;) hahahahhaa...

But of course, there was still more food for the day:)  For lunch I had a pretty pink smoothie made with a container of strawberry Chobani yogurt (quickly becoming one of my favorite Greek yogurts with all their great flavors!), a few frozen strawberries, 1 cup of Unsweetened Vanilla Almond Milk & a scoop of vanilla protein powder....

I also had a handful of gold....oh, opps...I mean the Maple Roasted Cashews that I ALSO got from the bulk bin at Whole Foods.  These are TOO. DIE. FOR!  Slightly salted with a kiss of maple = LOVE
(and I will explain my ultimate bulk bin purchase tomorrow....hehehhehe:)

For dinner, we figured after our sliders on Friday and Superbowl snacks on the horizon for today, that we'd keep it on the lighter side with some vegetarian stir fry....
In the 'fry:
  • Red Pepper
  • Onion
  • Green Pepper
  • Bean Sprouts
  • Broccoli
  • Carrots
  • Celery
All mixed with our favorite Garlic & Green Onion sauce and served on a bed of fluffy brown rice; this just tasted sooooo light and healthy.  So necessary for the night:)

Butttttt.....of course I needed one more little treat for the night:  A scoop of Vanilla Malt Chip Ice Cream:)  SO GOOD! 
Which I used to comfort me while we watched "The Crazies"....holy crack, was that movie....ummm...not entertaining!  I can handle scary/thriller, but I wasn't in the mood for gross and disturbing:(  Should have known better:  I didn't like "28 Days Later" either.  Comedy Channel to the rescue after that movie!!!

I could seriously eat almond butter straight from the jar. Adding it to oatmeal sounds wonderful.

I know! Isn't it heavenly?? I still can't believe it's ONLY Almonds & Salt:) You MUST try it in oatmeal. Any excuse is a good excuse:) hahahahahaha...
