Grocery haulin it...

Hey, everyone!  Sorry for the delay.  Yesterday totally just got away from me.  BUT I do have something to make it up to you guys:  A NEW VIDEO!  This time about my brief grocery haul from Whole FoodsJ...
Hope you enjoy!

(oh and PS- the entire HAUL was $35...NOT just the jar of coconut butter!  Just thought I'd clear that up in case that was confusingJ)

And without further ado, here's a sorta-double recap for you!

Tuesday Recap:

9:30am:  Breakfast- Almond & Coconut bar

11:30am:  Snack- Grapes

1:30pm:  Lunch- Pretzels & Hummus

Workout:  Zumba class

One of our favorite/quick & easy ways to serve leftover chili, not to mention how much do ya love that one pork loin got stretched into three meals??  Can't beat that.

8:00pm:  Dessert- 1 scoop chocolate ice creams
Had to have something while watching Impractical Jokers & Ridiculousness, right???J


Wednesday Recap:

10:00am:  Breakfast-Chocolate Peanut Butter bar

Morning Workout:  Power Yoga Class

1:00pm:  Lunch- Whole Foods trip
No folks, I wasn't just purchasing random coconut products and harassing our table neighbors to try coconut chips (see video clip above), we actually also met up for a quick lunch in the cafe.  My plate didn't look too pretty since I went FULL ON "comfort food" yesterday (lots of little bites of mashed potatoes, beef stroganoff, chili con carne, etc.), so I thought I'd show Katie with her plate since it was so pretty...(well, the plate AND Katie, that isJ)

Not to mention, lots of stolen sips from my bottle of Bai5 Coconut...
 
I couldn't refuseJ  My heart swells quite a bit when she asks for all things COCONUT, as you could imagineJ

And since my lunch (and 7 zillion bites of coconut chips) was so filling, both Scott & I passed on dinner.  Besides, I just could NOT WAIT to get to....

Evening Workout:  Body Jam
LOVEEEEEEEEEEEEEEEEEEEEEEE this release!  Love, Love, Love!  It's really exhausting, but sooooooooooooo much fun.  Body Jam is freakin awesome.

Alright...well, I might have some fun things to show ya tomorrow since we're making up for one of Scott's missed 'birthday celebrations' tonight.  If we're being honest, Katie is getting the best part of this deal, but I know we'll definitely all have a good time.

Black Bean burgers...and BOKWA...

Tuesday Recap:

8:00am:  Coffee with creamer

10:00am: Breakfast- Vitatop
I used to eat these for breakfast EVERY MORNING for YEARS.  I liked em so much (and they kept me so full) that I never got tired of them.  And for 100 calories, who could beat that?  But being home, for whatever reason, these do not keep me full AT ALL anymore.  By lunch (even with a snack of fruit), I'm PAST hungry and ready to eat everything in the kitchen.  But since I knew we were having a 'bigger lunch' yesterday, I thought I'd give one a whirl again...but like clockwork, by 11:51, I was ready to rip someone's head offJ  So it was a good thing, lunch was quick & hearty....

12:30pm:  "Lunch"- Black bean burgers with sweet potato puffs

Since Scott was home yesterday and I had to go out at night, we figured we'd whip up our dinner for lunch to keep us full for nearly the rest of the day.
These burgers started by whirling up:
  • 1/2 can of black beans, drained & rinse
  • 1/4 cup salsa
  • 1/4 onion
  • 3 garlic cloves

(This is where Katie's baby bullet still comes in handy...thanks, Laurie!J)

Mix up the blended ingredients with:
  • Remaining black beans
  • 3/4 cup corn 
  • salt & pepper
  • 1/4 cup panko
  • 1 egg white
Form into patties (mixture will be sticky) and place on a WELL-GREASED griddle or grill pan.  About 6-7 minutes and I happily lifted the lid of the grill to find fully cooked & STILL fully FORMED burgersJ


Topped them with a little extra "salsa"...in our case, this Red Pepper & Goat Cheese dip I had gotten from Whole Foods last week... 

Protein-packed & super filing, these guys were easy on the wallet, quick to make and super delicious.  Three reasons right there why adding a meat-free (or a few!) nights to your week is worth it. 

OK, OK....but I must admit our favorite part of this meal were the TOTS!  I found this sweet potato variety ALSO at Whole Foods...

...and baked them for AWHILE.  Long enough to get them crunchy & caramelized on top.  Oh man, they were heavenly!!  (about 45 minutesJ)

Even Katie got a little plate of her own of our delicious meal...

Which she DEVOURED...all while honing her fine dining skillsJ  Guess it's time to purchase some baby forks, huh?? 

After lunch, we gathered up Penny and headed out to the park to enjoy the sunshine...
...even if it was WAY hotter than I thought!  I was layering up Katie in tights & a sweater and was about to get a blanket for her...until I walked outside and realized my long pants were overdressed!  Ummm...can we start with mid-70's before we jump into the HIGH 80's, Mother Nature???

After the walk, I hightailed it over to the gym to try out a new (to me) class...

Unlike classes like Zumba & Body Jam that use counting to dance, the choreography for Bokwa (yes, Scott made me pronounce it 3 times before he got it tooJ) is actually based on the alphabet and you do all of the moves shaped like letters.  Apparently it's just coming to the USA after sweeping Europe, Asia and Australia.  Who know?  It was fun, but maybe a little too much repetition for me .  I like lots of combos & choreography, thanks to my old dancing school daysJ

5:30pm:  Dinner- Apple with Peanut Butter

I slammed that apple & pb down my throat since I had to hurry up & get ready for...
OK, so I've never actually seen Theresa's show (although I'm gonna start!), but I LOVE all things 'paranormal' and have my own fair share of 'odd coincidences' regularly (shadows out of the corner of my eye, 'lost & returned' objects, TV's turning on by themselves, etc.)...so I was intrigued once my cousin wanted to round up a group to go and see her.  Am I soooooooooooo glad I did.  She was PHENOMENAL!  I don't know how you could be skeptical after seeing her show.  But HOLY TEARS!  I spent most of the night bawling as she talked to people with whom she was connecting with their deceased loved ones.  It was sooooo emotional.  You can only hope it helped those people find some peace.  All I know was I had to come home & watch "Dance Moms" before bed so I could 'detox!'J  Very overwhelming and she's a super entertaining character!

"9 hours of work for 3 tablespoons..."

Thursday Recap:

8:30am:  Coffee with creamer

I swapped the cottage cheese for low-fat ricotta in these.  Same taste = French toastJ

12:30pm:  Lunch- "Arugula Nachos"
So after the success of my 'spinach pizza,' I thought of another killer combo that could use a swap!  Every few weeks I jones for my "quick nachos," but never like how sluggish & gross I can tend to feel afterward, even using low fat tortilla chips.  So I thought, why not do the spinach (or in this case, arugula, since it's what we had on hand) swap?

I piled a big heaping handful of arugula onto a plate & topped them with 
  • 1/4 can drained & rinsed black beans
  • 2 teaspoons taco seasoning (very important!)
  • Low-fat colby jack to cover

Popped the plate in the microwave for one minute and topped with a dollop of Non-fat Greek yogurt and WALLAH!  All the gooey, cheesy, nacho-y TASTE of nachos with about 3/4 less calories! 
Now if it's crunchy chips you crave, by all means HAVE THE CHIPS!  But if it's just the warm, Mexican flavors you REALLY want, try out this swap.  It was even better than I thought it was going to turn out!

2:30pm:  Snack #1- Apple 

After the apple, Katie & I took off for Whole Foods.  And while the prices were still astronomical, I was disappointed not being able to find a few items I was searching for...oh well.  I still managed to get some basics...

And ONE item I DID have on my list... 
So are you shocked when I tell you that I'm LOVVVVVVVVVVING this 'moment' coconut is having??  Everywhere you turn it's COCONUT WATER, COCONUT OIL, COCONUT BREAD as the new health food de jourJ  Apparently the saturated fat in coconut is actually GOOD for you, so that means we get to eat a lot MORE of it. 

I'm OK with this.

So coconut butter is actually ground coconut meat + oil, making it the coconut version of peanut butter, get it?  
Coconut butter is waxy and you need to melt it before using.  Which I learned AFTER trying to use it on my toast.  Thankfully, it was warm enough to let it spread a bit, but I'm excited to try it on a whole bunch of new things!  (but as always, use SPARINGLY!  1 or 2 tablespoons a day of all things BUTTER-related is more than enoughJ)

5:00-6:00pm:  Body Jam class = Endorphins on FULL BLASTJ

6:30pm:  Dinner- Marinated pork Chop & Slow Cooker Artichokes

So, since Thursdays I usually have something going in the slow cooker so that dinner is all ready after my Body Jam class, this week I thought I'd toss in some artichokes that I got 4/$1.99 at the store.  (they're usually so damn expensive!!) 
Chop off the bottom stem, strip off the outer leaves (no really...strip off all the ones that look dry.  They won't get any better!), and lop off the tops... 

Shove some garlic cloves in the leaves and drizzle with olive oil, salt & juice from 1/2 a lemon.  Pour about 2 cups of water in the bottom of the pot & set on low for 6-7 hours. 

We usually only ever have artichokes on Christmas, but the $1.99 made me want to give em another whirl.
 
Scott, however, wasn't much of a fan.  He called them "9 hours of work for 3 tablespoons of vegetables."  Probably why most people hate crabs & lobstersJ  I, personally, like anything that helps me to eat slllooowwwlllly.  So if you're like me, try these out!

8:00pm:  Dessert
Thought I'd polish off the last of my Mom's homemade Easter treats!  A slice of sweet bread & a slice of pastia were calling me.  YUM! 

Alright, well we are going to be BUSY, BUSY, BUSY this weekend, and dinner tonight is going to be some "no cooking Friday' leftover raviolis while Scott watches his Kansas City Royals on TV.  A rarity in this part of the worldJ  I'll be back Monday with a recap.

Savings & Superbowl Snacks...

Soooo...since I knew a calorie FEST was on the menu for Superbowl Sunday, I knew I had to start the day yesterday with some semblance of healthy:)  And after scrounging through some recipes, I thought this Three-Grain Porridge would fit the bill for "healthy," while still being a "warm winter breakfast" perfectly...
On Saturday night I combined:
  • 3 cups of water
  • 2 cups of unsweetened Apple Cider
  • 1/2 cup Barley
  • 1/3 cup Wheat Berries
  • 1/3 cup Oat Groat
  • 1 Cinnamon Stick
Stir all ingredients together and bring to boil over medium heat.  Once the mixture comes to a boils, partially cover the pot and lower the heat to a simmer.  Allow the grains to simmer for 1 hour, stirring occasionally.  (Once there is only a bit of liquid left = it's done!) 

Now here's where the fun "savings part" comes in!!  Since I didn't exactly have boxes of OAT GROAT laying around my house....I hit up the bulk bins at Whole Foods to pick up all my grains.
The beauty of this is that you ONLY have to buy what you need for the recipe!  So instead of buying a $3.50 box of wheat berries that may lounge around your kitchen for a year and a half....I bought nearly exactly what I needed and spent mere CHANGE one each item:

So from my 'bin' purchases + my little splurge on this yummy No Sugar added Cider & Spice juice (it tasted EXACTLY as if you were drinking applesauce....hahahahahahahah...odd, but VERY tasty!:) ....
...brought my little porridge to around 50 cents A SERVING!  How great is that??  We had enough for breakfast for the both of us, PLUS enough to "grab & go" for almost the whole week...
Not too shabby, right?? :)

We finished off our breakfast serving with some diced dried apricots, warm milk and a drizzle of maple syrup....yum!

For lunch I had another "Pretty Pink" Smoothie...made a little sweeter by a teaspoon of honey & a little more filling by a handful of chia seeds!  I'm tellin you:  Those seeds keep you FULL!!!  I was STUFFED for HOURS after this glass...

And finally...let's get to the big guns, shall we??? :)  Our friend got us started on our Superbowl festivities with a classic:  Wings:)

And as the game was starting, it was time to break into our dueling crock pots:)
We decided a little "Chili Bar" with all the fixins would be a fun idea this year:)

My friend made some Delicious AND Healthy "Confetti Chili" that was just PERFECT!

And after some pondering on some of my tailgating-type favorites, I came up with the idea for our chili dejour:  Pulled Chicken BBQ Chili!

We started by cooking up 2 pounds of chicken, coated in BBQ sauce, in the slow cooker for a few hours.  Once the meat was tender, Scott got busy shreddin....
Next in the slow cooker (along with the leftover BBQ sauce) went:
  • 1 can of tomato paste
  • 1 tablespoon chipotle powder
  • 1 tablespoon chili powder
  • 2 teaspoons cumin
  • 1 can of black beans, drained & rinsed
  • 1 can of kidney beans, drained & rinsed
  • 1 can of corn, drained
  • 1 can diced tomatoes
  • 1/2 cup of EXTRA BBQ sauce
  • 1 diced onion
...and finally, the shredded chicken....
Mix it all together and let it cook on low for another 3-4 hours.  Scott deemed it "couldn't have been better" :)  We have a winner, folks! :) hahahahahaha.... 
We had the chilies along with tortilla chips, cheese, sour cream and some cheese & scallion cast iron skillet corn bread, which I SOMEHOW forgot to include the picture of in this post...bummer:)  Let's just say:  it was goooooooooood!

And finally:  The desserts!  Since I loved the "Cheese stuffed Everything Pretzels" that I made LAST year, I thought I'd swap around some ingredients and try dessert flavored pretzels this time:) 
And I love the dough recipe because you mix it up in a food processor, where it goes from this:

To THIS in mere seconds!
For the dough, you need:
  • 1 1/2 cups warm water, 110 degrees F
  • 2 packages active dry yeast
  • 1 teaspoon sea salt
  • 1 tablespoon sugar
  • 4 cups all purpose flour
  • 1/2 cup powdered sugar
  • 2 egg
  1. Combine the warm water and yeast in a glass measuring cup and allow to sit for 10 minutes.
  2. Combine the flour, salt, sugar & powdered sugar in the food processor and pulse a few times to combine the ingredients.
  3. Next add ONE egg and the water/yeast mixture to the dry mixture and pulse until the dough comes together.
  4. Turn the dough out on a floured board and knead until the dough becomes pliable (continuing to add flour until the dough is no longer sticky.)
  5. Divide dough in half.  Starting with one half, roll out the dough in a large square.
Now, here's where the fun part comes in:  The Fillings!!!  And taking another cue from Guy Fieri, I made half of the pretzels with one of the best ingredients EVER:
6.- Spread about a 1/2 a cup of Nutella on the bottom third of the dough (the long end closest to you). 
7.- Fold the dough up and top with shredded coconut (or whatever you like:  Nuts, more nutella...anything!).
8.-Finally, fold over the last third creating a small rectangle, pinching all of the edges together.  Break out the rolling pin again and roll out the newly filled dough into a 11x15 square.
9.- Cut dough into one inch strips

Now here's the time consuming part:  You need to take each strip and seal all of the edges inward so you don't loose any of the filing:

And then roll into long strips:
And then, of course, twist them into pretzel shapes!!
If you are going to add any "extra" toppings, brush the pretzels with a beaten egg and coat before baking them in a 450 oven for 15 minutes.  (may take longer....my pretzels were on the "small side":)

OK, OK...so mine came out looking more like "knots" then pretzels, but they were still SOOOOOOOO good!
I topped half of the nutella pretzels with sugar & sea salt, while the other half I coated with Guy's spice mix which I realllllllly liked!  Who knew chili powder would go so well with Nutella?? :)

And as much as I liked the Nutella pretzels...I must say:  They were no match for the white chocolate:

...and coconut version!

I topped these with a little sugar & salt mix and they were just to die for!!!  Soooooo good!
MUST. MAKE. THESE!

Phew!  That was a mammoth post, if I do say so myself! :) hahahahahhahahahaha....and let's just say after all that chili/carbs/sugar/carbs/wings/carbs, I jumped out of bed this morning like a caged animal READY to workout and have a 'healthier' day today;)  It's all in the balance:)
