So in the winter time, not much brings me more joy then sitting at my kitchen table for breakfast on the weekends and seeing snow on my neighbors roof. It just makes me 10,000 times more happy to JUST. BE. HOME. It's the little things in life, no?? :)
And since yesterday was the QUINTESSENTIAL "snow on the roof" winter Sunday where it was just freeeeeeeeeezing outside, we started our day with a warm bowl of pumpkin oatmeal. And since I had been perusing Aarti's recipes lately (for POPSICLES, no less;), I just happened to stumble across her version of Pumpkin Pie oatmeal infused with Indian flavors of cardamom & cloves....
Yummmmmmmmmmmmm!!!!!!!! SOOOOOOOOOO warm & spicy! Totally hit the spot!
Especially with the drizzle of maple syrup and 1/2 & 1/2....oh my, oh my....so very delicious:)
From warm too....not so much;) Despite it being...ummmm...9 degrees out yesterday, I had just been CRAVING a banana/peanut butter smoothie! Probably because I had made one of these for lunch on Friday, and short of a 100 calorie pack of Trader Joe's Oatmeal Chocolate Chip cookies (thanks, M!), it kept me full allll afternoon! Love these things!
In the mix:
- 1 cup unsweetened vanilla almond milk
- 1 frozen banana
- 1 tablespoon peanut butter
- 1/2 scoop vanilla protein powder
Soooo good & sooooooooooooooooooooo filing!!!
And I needed the fuel to help me take down all of my holiday cheer:( Buttttttttt just as quick as you can say "Cupid's Arrow," I kept the cheer going by properly festooning my house in an array of red and pinks for Valentine's Day;)...
...with a few glittery shimmers of winter thrown in for good measure...
And no, this tree isn't coming down for awhile;) Who says gingerbread men are Christmas season exclusive?? ;)
Andddddd after all the packing & redecorating, we settled in to make our Football appropriate dinner...
I used the leftover Garlic Butter dough from my freezer and made the pizza sauce the same as last time....
Deep Dish Pizza Perfection:)
We used the pre-sliced pieces of fresh mozzarella from Trader Joe's...which turned out to be the stringiest cheese of all time!

Well, the game didn't turn out the way we hoped...but at least the pizza was awesommmmmmmme;) Believe me, it was as delicious as it was messy...and that means it was REALLLLLLLLLY good;) hahahahahha....
And to drown out our "sorrows" from the game;), I made us little "Faux Cheesecakes" by Bethenny;)
- 1/2 cup low fat ricotta cheese (or whipped cottage cheese)
- 1 tablespoon mini chocolate chips
- 1/2 teaspoon vanilla
- 1 teaspoon honey (or maple syrup)
Mix it all together, and wallah! A totally guilt free sweet tooth fix! Even Scott liked it;)
Soooooooooooo the cold temps continue into today with a high tonight of 8. PERFECT for Monday motivation to get to the gym, no????? But I planned ahead: I packed an extra sweatshirt;) Can't let the cold hold me down;) Hope you guys had a great weekend and our ready for the week ahead! Stay warm & have a great day:)
