So, while Scott was chowing down on another dinners worth of Moroccan Chickpea Chili...I thought last night was another good night to put some of Scott's NON-favorites to work. This time in the form of Sesame Salmon Burgers & Roasted Brussel Spouts...
I gathered all of my ingredients together for the burgers:
- 1/2 pound of Salmon, skinned & chopped
- 1 cup chopped spinach
- 2 tablespoons Soy Sauce
- 2 teaspoons Ground Ginger
- A drizzle of lemon juice
- Salt & Pepper
- 1/4 cup of sesame seeds
Mix it all together and form into patties. Next coat the burgers in MORE sesame seeds...
And add to an olive oil drizzled pan and cook for 4-5 minutes on each side...
I LOVE Asian-flavored Salmon burgers...and these babies were no exception! I served them with a yogurt, minced garlic & fresh dill dip....yum!
And of course, I can't have salmon without: Roasted Brussel Sprouts:)
Which brings us to Thursday, and the reason my blog is a little delayed today is because all of NJ is a little delayed today:) Because Thursday brought us a little of this:
And a little of That:
I know I'm going to anger some people (ahem:)...but I must say: I still heart snow. Although, get back to me in March and I may have a different answer;) hahahhahahahaha....
And of course, Penny agrees with me:)
She wore herself out for the whole day galloping around in the snow that was up to her chest:)
And snow today meant another warm breakfast...and I was so excited cause I found a near empty jar of Almond Butter just hanging out in my cabinet, which meant: OATS IN A JAR!
I started by mixing:
- 1/2 cup water
- 1/2 cup unsweetened almond milk
- 1/3 cup oats
- Vanilla
- Cinnamon & Nutmeg
And then mashed in a banana along with the cooking oatmeal...
Next, the oats...well...went in the jar so all of the leftover almond butter melted and swirled into the oats...Yum!
And, um....is Regis EVER in work anymore??? Every time I'm home...so is he;) hahahhahaha....
At least Kelly is always there...she CRACKS me up;)
Sooooooooo I lied about one thing yesterday: I did indeed get another workout in yesterday! ;)
Wednesday Night: One hour of snow shoveling (yes...I'm counting it as exercise...and so can YOU!:)
Thursday Morning: ANOTHER hour of snow shoveling + 30 minutes of jumping around and arm weights with my Ipod plugged into my ears;)
Minus the snow shoveling, that's usually my Thursday morning ritual:) It's the one day I blow off my DVD's and just do whatever will get my heart rate up to some Britney & Beyonce:) hahahahhahaha....
