THE GYM! Well...actually, my subconscious chose the gym;) hahahahaha I was literally driving home thinking "it's way too cold" & "this is why they make work out videos", and before I knew it, I had taken the gym exit:) I was pretty surprised, but figured I wasn't going to turn around at that point;) I went and did a 35 minutes walk/jog interval routine and was back in the car before I knew it;) (which, let's not kid around, is always a plus;) Quick, affective & I felt like a damn hot MESS, so I had to have 'worked' something, right?? :)
Annnyway...I got home with just enough time to throw my dinner in the oven before throwing myself in the shower....
Cause, yes...it was finally time for the "Extra healthy dinner" I had planned, and it tasted absolutely delicious last night! (compared to how I would have GRUMBLED through it while craving spaghetti & meatballs on Wednesday:)
I 'sped up' dinner by dicing the brussel sprouts and mixing them with olive oil, salt, pepper & garlic powder and putting them in a bowl in the fridge before work. When I came home, I gave em a shake, threw them on a foil lined cookie sheet and popped them in the oven at 450 for a half hour...
I never tried brussel sprouts until I made them roasted, and I must say: They are fantastic! Especially the longer they cook (and the extra little leaves that fall off and brown up get soooooo crispy!) Try these if 'sprouts scare you:) I bet you'll love em:)
And when the sprout had about 12 minutes left, I threw in my piece of salmon that I had coated with leftover pesto. The pesto wasn't super vibrant green since it had been in the fridge for a few days, but it still tasted just fine (and POTENT from that fresh garlic:)
A totally light and SUPER filing dinner jam PACKED with those lovely Omega 3's from the double dose of salmon & walnuts in the pesto. Perfectly Delicious!
And, in case you were wondering, no Scott (the non-fish fan:) did not eat this dinner:) He was busy eating leftover Smoky Potato Pancakes, so I thought it would be a good time to have 2 foods he's not super keen on;)
Andddddd....just to balance out all that fabulous healthiness:), my dessert last night was my 1/2 of the Dulce De Leche mega Crumbs cupcake....
My God...these things NEVER disappoint! I'm not even a big chocolate cake fan, and yet I was MELTING with this baby:) The smooooooth dulce de leche icing was what really put it over the top. I heart Crumbs...and my "Crumbs dealer";)
Ahhhh.....soooo it's Friday:) And better YET: It's a THREE DAY WEEKEND FRIDAY! :) We're starting off tonight with some leftover Double Dumpling Soup, Jersey Shore (sooooooooooo hard to change the channel last night so we could watch it together tonight:) & Ghost Adventures:) Perfect for a night where it's suppose to be THIRTEEN degrees outside!
And of course, it's suppose to snow again tomorrow. Why? Because we rescheduled "Black Swan" for tomorrow afternoon;) hahahahahhahahahaa....Only half an inch this time, so we should be OK (fingers crossed;)
What movies are you guys excited about seeing during "award season"??
Besides "Black Swan," I REALLY want to see "Blue Valentine" & "The Fighter" (and "The Social Network" as soon as we get it on Netflicks:)
And since it's Friday, it also means the return of Ekat's Potluck! Coming all the way from Alaska these day:)

I grew up hating Brussels sprouts, but the more I see them cut and roasted, the more I think I might have to give them another try. Maybe it was the way my mom made them that made me dislike them so much. The pesto topped salmon sounds pretty darn good, too.
you have to try it, Kristen! Roasting makes ANY vegetable taste good:) Let me know if you try em and like em!
