Well...you know what Monday means:
My big draw for Monday Salad this week was a homemade Ellie Krieger's "Green Goddess" dressing, made with my favorite: Avocado;) (Little Tip-if you have an avocado that isn't quite ripe...toss it in a brown bag overnight and it will ripen perfectly!)
Into the blender went:
- 1/2 Avocado
- 4 roughly diced scallions
- 3/4 cups buttermilk
- 3 tablespoons vinegar
- 2 tablespoons tarragon (we used dried, although I'm sure fresh would be better)
Whirl it up for a few, and you have a perfectly cool & creamy green goddess dressing. I might cut the vinegar in half though next time, cause along with cool & creamy...this was also pretty tart;)
Along with 2 tablespoons of dressing went:
- Diced Baked Chicken, coated with Montreal Steak Seasoning
- Lettuce/Spinach
- Cole Slaw Mix
- Carrots
- Red Onions
- A sprinkle of craisins
Yummy...the cool dressing went well with the SUPER spicy chicken! Scott swears he didn't go heavy handed on the Montreal Seasoning, but my mouth was on FIRE while I was eating this;) hahahahahaha....
In other food news, I thought I'd share my awesome lunch from yesterday! It was a little of this:

Those almonds were sooooooooooooooooooo good with the yogurt. They're subtly sweet from the honey, but with a little savory kick from the sesame seeds. SOOOOOOOOOOOO good! And a quarter cup (170 calories) went a LONG way. So good!
And in non-food news, so I had been thinking about giving you a glimpse of the exercises I do every day. I know I write about it here and there, but I thought I might keep more of a log on a daily basis. It always motivates me to see what other people do, so I thought maybe this would give you some ideas of things to try. Especially because my philosophy of exercise is "Do what you can, when you can" AND Do what you want, cause you'll never stick with it if you don't enjoy it. I never force myself to do anything I don't like...although that doesn't mean I don't have to PUSH myself to do it sometimes, but you'll never regret a workout. You'll only regret NOT doing one. So do what you love & get it done;)
Monday Morning: 3 mile "Walk Away the Pounds" with 8 pound weights
Monday Night: 1 hour Pilates class
I bundled up for the gym last night like it was my job. We're talkin sweatshirt, coat, hat, gloves, scarf...the whole nine! I even managed to secure "Agoodparkingspot," so I guess the 'Exercise Gods' really wanted me to get to class...even though it was freeeeeeeeezing out;)
