2 + 2 = Pancakes:)

Well...since I knew we were planning on having pancakes for dinner last night (who doesn't love "breakfast for dinner??":) anndddd since I had a leftover can of sweet potatoes in the fridge from my Wednesday morning oatmeal....I figured, why not put 2 + 2 together???  And wallah...dinner was served! :)
After a quick search online, I found a recipe from the Food Network.  I used:
  • 1 cup White Flour
  • 1 cup Multigrain Trader Joe's Baking Mix (we didn't have wheat flour, so I made this swap)
  • 3 tablespoons baking powder
  • 3/4 can sweet potato pieces (mashed)
  • 2 cups Unsweetened Almond Milk (35 calories a cup vs. 86 for 1% milk)
  • 4 teaspoons melted butter
  • 2 eggs
  • Vanilla
  • Cinnamon (lots!)
  • 1/4 teaspoon Nutmeg (or more;)
Mix it all together and cook like normal pancakes.  This recipe made about 8 large 'cakes!  But the BESTTTTT part of this recipe was the Toasted. Pecan. butter...
Oh yeahhhhhhhhhh.....
  • 1/4 cup pecans, chopped, toasted &cooled
  • 1/2 cup butter
  • 1 teaspoon Vanilla
  • 1 tablespoon Cinnamon
  • 2 tablespoons brown sugar
  • 1 tablespoon honey
Which = pretty much every ingredient that I truly love;) hahahahahahhaahaha....And the butter just left a trail of cinnamon flavored pecans in it's brown sugar & cinnamon wake....

SO GOOD!!  And perfectly studded with sweet potato bites;)
This was one good breakfast dinner!  I highly suggest breakin this one out for the upcoming weekend!  And repeat after me:  Do NOT skip the butter! :)

Thursday Night:  Kitchen Dance Party of one to Britney's new single.

Friday Morning:  Yoga/Pilates DVD with hand weights  (LOVE this DVD!)

In other news, it's Friday which means it's Ekat's potluck party!  Erin graciously added my tamales to her picks from last week...and I decided to toss in our "Chicago style Deep Dish Pizza" for this week's 'lock...
