The "Bad" News: So the "light snow" piled up pretty well during my completely psychotic yoga class yesterday morning...to the tune of my car skidding out of the parking lot on the way home! I quickly knew: "Black Swan was NOT happening" Bummer.....even Penny was sad;)
The Good News: I had absolutely no where else to be and the snow continued falling until almost 4:30! The universe was OBVIOUSLY telling me to kick my feet up....which I gladly obliged and got in some reading:
(Great book...but some scarrrrryyyyy stuff!)
....and some "Devil Wears Prada" by light of my Christmas tree....
...cause yes kids, I do believe we picked one of the best trees ever this year. NOT ONE ornament has fallen off....which is usually a tell tale sign that the tree has passed on to the next forest in the sky. But this one is still hangin strong...and I am NOT getting rid of a perfectly beautiful tree! Hell, I'll throw hearts and shamrocks on it for all I care;) hahahhahaa.... we'll see:)
Anyway, back to the food;) So I decided to try out one of my Veggie Masala burgers for lunch in the afternoon...
I threw it in the frying pan to get a nice sear and was quite delighted that there were actually DISCERNIBLE pieces of veggies in this burger...always impressive!
I threw the burger on a whole wheat pita with a little onion and spinach and was good to go...
This thing was delicious...albeit: SPICY!!! I actually went back and threw another huge handful of spinach onto the burger to balance out the spice:) hahahahaha....they weren't messin around in the cumin & coriander department;) But these were a great (120 calorie) find!
The snow also thwarted our original dinner plan, since a trip to the market was necessary. So instead we dove into the pantry to make the perfect snow dinner: Soup! Double Dumpling Soup to be exact:)
And since I had this recipe on the brain for the upcoming week, I was VERY happy that I had picked up one of the star ingredients in my TJ's spree last week: Whole Wheat Gnocchi!
And the "double dumpling" comes from the gnocchi andddddddd mini turkey meatballs:) Who doesn't love that??
Talk about snow day food;) This came together in an HONEST 30 minutes;), but tasted like it had been simmering for hours! I loved that you cooked the meatballs for 10 minutes, added the gnocchi for 5 and then heated the peas for the last 2. One pot is always welcome in our house:)
Try this on the next snowy day......which, hopefully, might be VERY soon for us Jerseyians:)
And since my matinee movie day got canned, Scott & I had our own movie night with "The Last Exorcism" (pretty good! Definitely creepy!) and a little Ralphie May to balance it out;) hahahahhahahaha.....
Well, now I'm just sitting here waiting for Scott to wake up to make some dessert breakfast:) It's going to be gooooooooooood, me thinks! :) Have a great (and lazy!) Sunday! :)
