Does this say Friday Night or what??? :)
Dinner last night came together with the help of two things: #1-Trader Joe's....
And #2- My veggie bin:)
I sauteed diced zucchini, red & orange peppers, purple onion & leeks to soften them up and get a little color... (how pretty is THAT pan??:)
Meanwhile, I stretched out my (99 cent!) Whole Wheat Dough and covered it with defrosted homemade pesto...
Next, I topped it with some torn spinach leaves....
And finally, the sauteed veggies, the last of the smoked mozzarella and some of the light mozzarella...
15 minutes in the oven at 450 and we were in business! You can't even imagine how much flavor EXPLODED out of all these veggies...this was just DE-LIC-IOUS! And the pesto & smoked mozzarella REALLY put it over the top...I already can't wait to clean out my fridge drawers for the next pizza;) hahahhahaha...
And we got even MORE veggies with 2 heaping bowls of salad:) (Sweet butter lettuce blend this time:)
I think we certainly knocked back a few food groups with that dinner:) hahhahhaha....and a TASTY way to do it, AT THAT! Try this one out the next time you have veggies layin around:)
And for dessert, I decided to nibble on a few of these from my Christmas box:) These things are SO "potent" that I actually portioned out a small amount in a bowl. After a few, I PUT THE REST BACK. Can I tell you how often that happens?? Ummm...hardly ever! These are LEGIT for a quick sweet tooth fix!
Annnddd....this morning I woke up to....
YEP! MORE SNOW!! Wohooooooooooooooo:) So my plans of a Green Monster went out the window and instead were replaced with a warm bowl of Banana Brulee Oatmeal...
Perfect for a Snowy Saturday morning:)
OK!! Well I must jet seeing as how I can't let the snow deter me from Power Yoga this morning and then I will be off to do another good snowy day activity: Go to the movies!! Soooooo excited to see "The Black Swan!"
