Holiday Weekend Wrap Up....

Morning, everyone!!  Before I get into my post, I just first wanted to give a big THANK YOU to my best friend Amy for the header she made for my blog!!!!  I LOVE IT!  I feel so official now:)  So, THANKS AGAIN, AMY!!!  YOU'RE THE BESTEST! :)

Sooooo...anyway, I hope you're smiling wherever you are:)  For me, it's back to work...but my lucky duck husband gets one more day of lounging (actually...more like laundry & errands;) hahahahahhaha....sooo I thought I'd give you the recap of MY last holiday break day of lazy cooking & lounging mornings:) hahahahahah.....

Well, yesterday turned out to be Curtis Stone day in our house:)   We LOVEEE his cookbook...mainly because everything looks SO good in the pictures! 

And to complete our week of relaxing breakfasts, we thought we'd try these Crispy Vegetable Fritters.  Like the crepes, I thought these were going to be a pain in the a**, but they actually weren't too bad...short of trying to NOT julienne your fingers while slicing up the zucchini, potato, onion & carrot;)

To cook up the fritters, we gathered a quarter cup of the shredded veggie mix....

...Dropped it onto the hot griddle....

...and flattened it with the bottom of the cup....

...a few minutes on each side and these babies came up golden & delicious.  They were SOOO flavorful for being none too many ingredients!

And we topped them off with a little sour cream mixed with a little Tortola Island Spice:)  It's always fun to remember the Caribbean in JANUARY.  In NEW JERSEY :) hahahahhaahhaha

Dinner was...you guessed it!  ANOTHER Curtis Stone recipe;)  This time we tried Chicken & Leeks pie topped with that God-like ingredient: Puff Pastry... Hellllllllllll YEAH! :)

Talk about WARM & COZY on a gloomy day!  The onion, leek, mustard, chicken, puff pastry combo was just comfort personified:)

And along with the pie, we had this salad mix that I found at TJ's:

I love, love, lovvvvvvvvved that it already had herbs mixed RIGHT into it!  It turned that boring old salad blend into a hit:)  I'll be buying more of these!

And after a few leftover cookies, it is back to the grind time in ALL things:)  We gathered up all of our "lighter" cookbooks in a quest to cook solely from these for the next few weeks:) hahahahahhahaaha
Although, I must say....we did pretty good this holiday!  We DEFINITELY indulged and enjoyed...but we DID reach our goal of working out almost every. single. day of our break.  I was pretty proud of that!!  Yesterday was the ONLY day we spent sun up to sun down on the couch...and I'm blaming that on the "Ghost Adventures" marathon;)  So I'm happy to say were staring off on a STRONGER foot in 2011, rather than a brand new one;) hahahahahhahahahahaha  Although I think we're BOTH ready to see the cookies go bye-bye! :)  I DO need a sugar detox for awhile;)  So be on the look out for lots of lighter recipes to start the New Year off right!  Starting tonight, because it's BACK to Salad Monday today;) hahahahhahaha...

hey donna. it's been a while since i have read your blog (sorry i have been busy), but i came onto today and thought wow! what an awesome looking blog she has now! then i saw your thanks to amy. it really is great!! and i think i need to try the crispy vegetable fritters! they look yummy!

thansk Chris!! Yep, Amy made me look super "official" now;) hahahahahaha...(and you'll LOVE those fritters:)


And yes, I do get Food Network magazing and love it! I was so excited to see the "light recipes" this month, but I have to say I'm even MORE excited to try Guy's Nutella filled pretzels:)
