Bethenny Day:)

Well, if Sunday was Curtis Stone day in our house...yesterday was DEFINITELY Bethenny Frankel day! :)  Because dinner came directly from one of my favorite, favorite books EVER:
Seriously, if I need a kick in the a*&, this book will put me write back in the frame of mind to eating healthier:)  (I don't even want to admit how many times I've read it...let's just say I need a lot of reminders;) hahahahaha....

Anyway...back to dinner:)  Since Scott took a trip to our local farmer's market on Monday, I wanted to make sure to use up all of the good veggies before they went bad!  First was a cup of torn basil over pasta (1/2 whole wheat fusilli, 1/2 white shells...it was all we had in the house:)

Next was 7 chopped Roma tomatoes, which simmered with 1 cup of pasta water, and a handful of toasted walnuts  (again, the recipe called for pine nuts...but we used what we had:) ...

And finally...the star ingredient AND the reason this recipe came to mind:  The smoked mozzarella! :)

This stuff is SO flavorful that you only need a little bit to pack a punch (we used about 4 oz.)....

This dish was SUPER flavorful and tasted soooooooooooo fresh....

And you gotta love any dish that has little hidden nuggets of smoked cheese... :)

And we rounded out dinner with MORE TJ's Herb Salad.  I'm tellin ya, I never would have thrown cilantro leaves in a salad, but let me tell ya, it is sooooo good!

And why is this recipe even MORE awesome???  I got home around 5:20, and dinner hit the table before 10 of 6.  Gotta love simple AND healthy:)

And Bethenny day was made complete with: 
I started the morning with the 40 minute yoga section and ended with 2 rounds of both the 10 minutes weights and 5 minute "booty blast" after dinner.  I find working out so much less daunting when you commit to small increments rather than full blown workouts.  Plus, doesn't that rev your metabolism twice in a day??  I think I heard that somewhere:)

Anyway....try out this simple & healthy pasta!  I'm sure you'll love it:)  (AND Body by Bethenny...love it!)

I am so tickled to have stumbled upon you from Full Plate Thurs. I love TJs as well - just have to drive to another town to enjoy it!
