Another Dinner by....

Yep...you guessed it:  Trader Joe's:)  Well, actually Trader Jose's this time since we went Mexicana for the night....

After scanning the freezer for a solid 10 minutes, I decided on these Black Bean & Cheese Taquitos... 

Maybe not the healthiest of pickings...but in the "taquito" realm, these are not too shabby.... 

And the ingredients list can't be beat! 

10 minutes in the toaster oven and dinner was complete!  With barley any clean-up = Perfect for a Friday:) 

These babies were SPI-CY!  Well, for me, anyway;)  I cooled them off with a little Fage yogurt (just as good as sour cream, but lower cal & with a protein bonus!:)  But I LOVED the crunchy corn tortilla crust around the (spicy:) filling and that they just tasted so fresh and NOT greasy at ALL.... 

We also had another "Friday appropriate" food to go along with the taquitos = 5 Layer Dip:)  I found this in the produce section, and it just looked too fresh to pass up.... 
Black Bean Dip, Guacamole, Sour Cream, Salsa & Cheese = yes, please!

And we scooped up the dip with these Baked Blue Corn Chips.... 
Ingredients:  Organic Blue Corn, Expeller, Pressed Oil, Salt & Lime.  Pretty good, right??

And just to bump up the "healthier" end of the meal, we rounded it out with spinach salads...just to sneak something green in there;)
So good and so fun for a Friday night:)

And while I was wandering the aisles, I also spied another gem to try for the night: 
And in order to NOT eat an ENTIRE container of chocolate dipped chocolate chip cookies, I brought the container into work with me to share with everyone...

...Leaving just enough for us to try:) 
 Happy Co-Workers + Still being able to enjoy cookies in moderation = win/win!  Win/Win, People!:)

Oh my, were these fantastic!  Even MORE reason I was thankful that I had exactly ONE in the house for me to try;)  hahahhahhahahahhaa....

Whichhhh...brings us to Saturday morning-Wohoooooooooo!!!!  I just love those words:) 
I started my day with some Maple Peanut Butter Oats...
  • 1/2 cup water
  • 1/2 cup unsweetened almond milk
  • 1 teaspoon vanilla
  • 1/3 cup oats
  • 1 teaspoon Maple Cream  (from Vermont)
  • 1 tablespoon peanut butter
And I needed the protein from the peanut butter to get me through my morning workout today:

Saturday Morning:  1 hour "Groove" class + 1 1/2 hours Power Yoga

I had planned on switching up my routing today and going to the Groove class for the first time in ...awhile...since it was the "launch" of the new routines (which is always when everyone is hootin, hollarin & very excited:)  But then I still felt  like I had some energy left, so I stuck it out for some killer Power Yoga.
...And now I'm DONE for the day;) hahahahahahaha....

So, needless to say, I was pretty darn hungry by the time I came home:)  Thankfully, lunch came together 1, 2, 3...

#1 - Heated a piece of Garlic Naan in the toaster oven for 3 minutes.... 

#2-  Topped the Naan with a couple tablespoons of Hummes (LOVE this 3 layer one...and I'm not usually a fan of flavored hummes...sad, I know:)

And finally, #3 - Top with 1/4 cup Tabbouli.... 
This was a Mediterranean style protein POWERHOUSE of a lunch...and just soooooooooooooooo delicious.  SO Good, in fact:  That I forgot to take a picture of the 'finished product' ;) hahahahahhahahaha.....

However, I DID get a picture of Scott's leftover pizza lunch.....solely to tell you that I was VERY grateful my lunch was delicious because THIS. SMELLED. INSANELY. AMAZING while it was reheating....T-R-O-U-B-L-E :) 

Soooooo......heard enough from me yet?? ;)  Hope you guys have a fun (or relaxing) day planned!  We're takin the night off from cooking tonight and heading out with some friends before we all get a little "All Work And No Play Makes Jack A Dull Boy" :)  (Especially with another snowstorm in the forecast...and yes, I still love it:)
