One Mother-lovin Fiesta Weekend Wrap Up...

Quite a title, right??  Well, there was quite a bit going on this weekendJ

First off was our "2nd annual Friday night Cinco de Mayo fest" kicked off with my attempt to recreate our favorite appetizer from Mesa Grill, Shrimp Tamales....
I made the tamales on Thursday night (yes, THAT was what was in the blenderJ), refrigerated them overnight and steamed them up for 45 minutes or so to cook through.  They came out perfect!  Topped off with that yummy shrimp/corn sauce.  They might not have been Flay's, but they were pretty freakin awesomeJ

All served with my friend's awesome guacamole & mock mojitos made with sparkling lemonade, Sprite & fresh mintJ  That's how we roll J

And much like last year, our fiesta was capped off with a fun surprise from an early "Mother's Day gift" from Penny....
"Penny" thoughtfully sent me some ice cream all the way from NEW ORLEANS (as she knows it's near the top of my "Must visit ASAP" listJ)

We had Toasted Coconut (smart girl!), Praline crunch, Creole Cream cheese, White Chocolate Bread Pudding with a caramel BOURBON swirl (yum!) and the BEST freakin Vanilla ice cream I've ever had in my entire life!!!!!  It was a crowd favoriteJ  The vanilla beans CRUNCHED when you tasted it.  It was outstanding!!!!!
Not only were these SUPER creamy, rich & decadent...but I loved that they were based on flavors of the city.  So cute!!!  Can't wait to visit the ACTUAL ice cream store one day soon.

Andddd yesterday morning brought my fourth annual Mother's Day breakfast!  I try to make something different every year and this year I RACKED my brain for DAYS trying to come up with new ideas.  And after daysss I finally nailed down a menu on SATURDAY! (nothin like last minuteJ) hahahahhahaa...
We started with some strawberry and mango salad topped with homemade coconut & pineapple whipped cream.... 
Thought that would be tropically! J

And for our main course:  Stuffed Waffles!!!  Fun, right???  We had:

#1.- My Mom's favorite flavor:  Pumpkin waffles stuffed with praline & spice cream cheese

#2- My Mother-in-law's favorite:  Coconut Pineapple waffles with coconut/pineapple cream cheese filing....

And finally, Scott's favorite (cause he's always a good sportJ):  Blueberry with blueberry cream cheese...
I made all of the waffles the night before adding the different flavors to each batch (coconut/crushed pineapple, pumpkin) and after they cooled, added in the flavored cream cheese.  They heated up in about 30 minutes at 350.  The only tip I would say is to let them sit out for about 10 minutes!  They cut WAYYYYYY better after they "set"! hahahhahahaa...but they were definitely a good experiment with GREAT results!  I couldn't even pick a favorite!  One was tastier than the nextJ  You MUST try these out!

And as a side (and to break up all the sweet JUST a bit), I sauteed up some onions with this find from TJ's...
Even Scott, the non-sausage fan, liked these!  They were sooo tasty with just a little kiss of sweet from the mango.  YUM!

We also had some frozen lemonade pie and lots of love given to EVERYONE from our resident welcome wagon: Penny...
You can tell who my Mom was most excited to seeJ hahahahahahahhahahah  It turned out to be another great brunch with some fantastic company  (Hi Mom & Aunt Pat!J)

And after all those waffles, we thought we'd keep dinner on the lighter side with one of my favorite, favorite salads:  Pecan crusted goat cheese salads!!!
In the mix:
  • Lettuce
  • Red Grapes
  • Scallions
  • Craisins
  • Chive & Dill dressing (made with white vinegar, olive oil, honey, salt & pepper)
  • Goat Cheese rolled in toasted pecans
YUM!!! Tasted like a million bucks!!!!!!!!

And on that 'healthier' note, here was my workout rundown from last week:

Monday:  30 minutes dance/weights + 45 minutes walk + 1hr. Power Yoga

Tuesday:  Weight Loss Yoga-Level 2 & 3

Wednesday:  Circle Pilates

Thursday:  30 minutes dance/weights

Friday:  1 hr. Yoga for the warrior

Sunday:  3 mile walk

Ready to start a good week???  Get ready...get set...GO!
And much like last week, THIS week has a "theme" too!  After finding myself with a bin full of leftover random herbs, my mission this week is to create unique meals to use them allllll up!  Stay tuned...I have some good ones on tapJ

Wow...that's quite a weekend! I like the idea of the stuffed waffles. I've done stuffed french toast, but never waffles and it sounds delish, especially with those yummy flavors!
