Kick Off....

I can barely believe that Cinco de Mayo is this week!  Last year, it felt like eons before we got around to May and this year it just sky rocketed to its arrival!  Last Cinco I had a whole weeks worth of dinners planned out, whereas this years quick arrival brought a lone trip to the store to pick up "the basics" (aka- peppers, avocados, onions, etc.) hahahahahha...and with that, it should be no surprise that we had taco salads last evening to kick off the weekJ
In the mix:
  • Ground turkey mixed with taco seasoning
  • Lettuce
  • Carrots
  • Avocado
  • Black Beans
  • Corn
  • Red onion
Yum!  Avocados just add such a treat to salads...they're just so cool & creamyJ

And to fix my sweet tooth last night, I finished off the last of these treats from San Fran:
Oh holy heaven...I had been clinging onto the last 2 of these like my life depended on, because they were just SOOOOOO freakin amazing!  Tender, buttery coconut shortbread cookies bathed in a sea of milk chocolate.  Just TO DIE FOR!

God, I miss you, San Francisco!!!!!!!!!!

So anyway...back to the festivities at hand.  If you want a few recipes to try out this week, here was my menu from last year.  They're not super authentic, but they're lots of funJ
I think I finally squared away our 'menu' for this week...and it should be a good one!  Stay tuned for the fiestaJ

Great looking salad! Love avocados...grew up in San Diego so eating them always makes me feel at home!

I have challenged myself to a 30 day food challenge to make dinners with as many ingredients as I have on hand(I need to clean out the freezer). Totally forgot all about Cinco de Mayo. Boooo....bad planning on my part. So I got over the disapointment, sucked it up and raided my pantry for ideas. Making chicken tortilla soup, Spoon Bread, Mexican brownies and Dulce de leche ice cream. Ole! Also making pinatas with the kids. =)
