The fiesta continued last night with another one of our quick & healthy dinners. This is one of my favorites because, typically, Mexican food can tend to be fattening and greasy...but with a few tweaks, it can actually be packed with lots of fresh flavors from healthy ingredients. It's all in the preparation, folksJ
On one side of the plate we had stuffed poblano peppers....
Usually "chile rellenos" are deep fried...but these are broiled and stuffed with black beans, corn & tomatoes. How good does that sound?? A little sprinkle of cheese on top and you have a perfectly filling & "festive" meal that will leave you feeling light and not bogged down with grease. NO Buenos!
And the side....oh, the side...was one of our all time favorites! Southwestern Couscous Salad....
- 1 cup whole wheat couscous couscous, cooked & cooled
- 1 can black beans, drained & rinsed
- 1red pepper, diced
- 1/2 sweet onion, diced
- 1/2 avocado, cubed
- 1/2 bag of Roasted corn, defrosted
- 1/4 cup cilantro, chopped
- Juice of 1 lime
- Drizzle of olive oil
- Salt & Pepper
Mix all ingredients together & chill.
Tell me that's not a fiesta!J
