I know.
I know jussstttt what your gonna think when you see our dinner from last night, but I PROMISE YOU: It was a good oneJ (Maybe it wasn't the best day to bust out my patriotic placemats. Green doesn't go so well with red, white & blueJ)
After noticing we had a random container of spinach just hanging out in the fridge, I did a quick google search of "Spinach" the other night, and quickly fell on a recipe for Spinach Feta Burgers. (bonus since we also had a random container of fetaJ) And what I liked BEST about this recipe was that the main ingredient of the burgers?? CHICKPEAS! And we loveeeeeeeee chickpeas!
You start off by barley letting 4 (or 6...who's counting?J) cups of spinach barely wilt in a pot with a little olive oil & garlic...
Then you add the spinach to a food processor along with:
- 1 can of chickpeas (drained & rinsed)
- 1 onion (sliced)
- 3 eggs (or 3/4 cups of Eggbeaters)
- lemon zest
Whip that all together and pour into a small bowl. Add the crumbled & diced 1/2 cup of feta and about 1 cup of panko (or breadcrumbs) and allow it to sit and soak up the breadcrumbs.
If you like Green...well, this is just gorgeousJ
Form the chickpea/spinach mix into patties & cook on medium/low heat for about 7 minutes on each side (flip carefully! They're pretty delicate!)
So this little pattie??? PACKED with flavor! It was SUPPPPER light and airy, filled with all 'good for you' ingredients and clocks in around 230 calories a pattie. 230 folks! Normal burgers are DOUBLE that. A pretty good 'less' meal for a Wednesday nightJ
As our side, we had some sauteed peppers...
...and I'm not even trying to be funny when I say that I think this pepper is truly gorgeous!
(so is the fella chopping the pepper, if I do say so myselfJ)
And to round out our dish: Some sweet potato chips....
Scott had picked these up from Trader Joe's the other night and they were SOOOO tasty! They ACTUALLY taste like crispy sweet potatoes...not an overly salty/greasy/oily/potato chip version of themJ
And BONUS: being low and sodium & a good source of fiber...you can pretty much call these babies GOOD FOR YOU!
So dinner in conclusion: Maybe not the prettiest (much like the "Green Monster") but spinach is good & good for you, so give this babies a whirl, would ya?? J Give green a chance!

Hi, I found you on Amee's savory. I love spinach and I love chick peas. It sounds kind of like a pimped up falafel. Can you possibly go wrong with that?
